Apple Fritters

1 cup all-purpose flour
3 tablespoons granulated sugar
1/4 teaspoon salt
1 cup cold beer (not dark)
10 cups vegetable oil
2 apples (1 pound), peeled, halved lengthwise, cored, and sliced 1/4-inch thick
Confectioners' sugar, for dusting

Stir together flour, granulated sugar, and salt, then add beer, and whisk to combine. Heat oil in a 5-quart heavy pot until the thermometer registers 375 degrees F.
Dip apple slices in batter, shaking off excess, and fry, about 8 at a time, until golden, about 1 1/2 minutes on each side. Transfer fritters with a slotted spoon to paper towels to drain. Serve warm, dusted with confectioners' sugar.

Cake Mix Brownies

1 box chocolate cake mix
3 eggs
1/4 water
1/4 cup oil
1 12 oz bag semi sweet chocolate chips
1 can sweetened condensed milk.

In a large bowl, mix the 1st 4 ingredients by hand till blended. Set aside. In a saucepan, or microwave, melt the chocolate chips, add sweetened condensed milk and stir till completely blended. Add to cake mixture, mix by hand till well blended. Pour in 9x13 pan that has been sprayed by cooking spray. Bake at 350 for 40-45 minutes. Let cool, cut into squares.

You might want to add chips, nuts, or use yellow cake mix, and white chocolate chips to make blondies.

Heavenly Pink Salad (call it "Fluff" for the kids!)

1 (21oz.) can cherry pie filling
1 (14oz.) can sweetened condensed milk
1 (11oz.) can mandarin oranges, drained
1 (15oz.) can crushed pineapple
1 (16oz.) carton frozen whipped topping, thawed
1 cup shredded coconut
2 cups miniature marshmallows
crushed pecans (optional)

Mix together the cherry pie filling, condensed milk, oranges, pineapple, coconut, marshmallows and whipped topping. Chill for several hours and top with crushed pecans if desired.

Apple Cranberry Kissel

5 Granny Smith apples, peeled, cored and chopped
2 cups cranberry juice
1 cup sugar
1 teaspoon ground cinnamon
3 tablespoons potato starch (or cornstarch)
1 cup cold water
1 1/2 cups sour cream
1/4 cup brown sugar
1 teaspoon fresh lemon juice
8 to 10 gingersnaps, crushed

Add the apples, cranberry juice, sugar and cinnamon to a saucepan. Bring to a boil over high heat. Reduce heat to low, cover, and simmer until the apples are very soft, about 10 minutes. Dissolve the potato starch in 1 cup cold water. Pour this slurry into the hot apple mixture, stirring constantly. Continue stirring until the kissel starts to bubble again, about 1 minute. Remove from the heat and pour into individual dessert dishes. Allow them to cool then refrigerate them for at least 2 hours.
In a small bowl mix the sour cream with the brown sugar and lemon juice. To serve, put a good dollop of the sweet sour cream on top of the kissel and swirl it in with a spoon. Garnish with the crushed gingersnaps.

My 8 year old loves this one:

16 to 18 chocolate wafer cookies
cold milk
1 (3 1/2 oz.) pkg. instant chocolate pudding & pie filling mix
8 clear plastic party cups (6 to 10 oz. size)
32 gummy worms

Place cookies in a plastic sandwich bag and crush with a rolling pin (you will need 1 cup crumbs); set aside. In a chilled small mixer bowl, make pudding according to package directions.

To assemble, divide the pudding mixture evenly into each cup on top of the crumbs. Sprinkle about 2 tablespoons of the crumbs over the top of the pudding. Loosely cover and chill at least 30 minutes or overnight. Before serving, place 4 gummy worms in each cup on top of the "dirt".

Can also make this in a square pan instead of indivudual cups.

This is a cookie bar...don't know how healthy it is, but it fits all your other requirements. GOOD LUCK. INGREDIENTS 1 (18.25 ounce) package Pillsbury® Chocolate Cake 1/3 cup Crisco® Pure Vegetable Oil 1 egg 1 cup chopped nuts 1 cup semi-sweet chocolate chips 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk 1 teaspoon vanilla extract Dash salt DIRECTIONS Preheat oven to 350 degrees F. In large bowl, with mixer on medium speed, beat cake mix, oil and egg until crumbly. Stir in nuts. Set aside 1 cup of the crumb mixture. Firmly press remaining crumb mixture on bottom of greased 13x9-inch baking pan. In small saucepan, melt chips with sweetened condensed milk, vanilla and salt. Pour evenly over prepared crust. Sprinkle reserved crumb mixture evenly over top. Bake 25 to 30 minutes or until edges are firm. Cool. Cut into bars. Drizzle with icing (optional). Store at room temperature.

My nieces love this. Cut up some bananas and freeze them for several hours or overnight. Then take them out as needed and dip in melted chocolate. To make them even more appealing, top with some chopped nuts or cheese. Easier to handle if you put stick the banana pieces in lollipop sticks before freezing. Have fun triyng!!!

Instant pudding is always a hit. You can vary it by layering flavors, by adding CoolWhip and a cherry, or gummy bears. Kids love it!

some good quick snacks are saltine crackers and chocolate frosting. put the frosting between two crackers like a sandwhich, they are delicious.
for a dessert, i love waffles with peanut butter, melted chocolate chips, and syrup.

strawberry shortcake...... get a plain piece of pound cake with a spoon of strawberries (frozen) with whip cream on top ! let them do it even add sprinkles my daughter loves em
