Chocolate Strawberry Cheesecake
Ingredients:
1 1/2 cups finely crushed graham crackers
1/4 cup sifted powdered sugar
1/3 cup melted butter or margarine
2 cups fresh or frozen strawberries
1/2 cup sugar
3 8-ounce packages of cream cheese
1 can (14 ounces) sweetened condensed milk
4 eggs
1 teaspoon vanilla
1 cup chocolate chips, melted and cooled
Instructions:
In a bowl, combine crushed graham crackers and powdered sugar. Blend in melted margarine. Press into the bottom of a 9" springform pan.
In another bowl, combine the strawberries with 1/2 cup of granulated sugar; set aside.
For the filling: Using an electric mixer, beat the cream cheese with the condensed milk until combined. Add vanilla and eggs. Divide this mixture in half. Add the melted chocolate to one half of the mixture. Pour this (the chocolate batter) into the crust lined pan. Add the strawberry and sugar mixture to the remaining batter. Spoon over the chocolate filling.
Bake at 350 degrees for 50-60 minutes. Remove from oven and cool for half an hour. Remove sides of the pan. Cover and refrigerate for at least 4 hours before serving.
Garnish with strawberry halves.

Strawberry Cake
1 box yellow cake mix
5.9-ounce box instant vanilla pudding
8-ounce package cream cheese, softened
2 1/2 cups milk
2 1/2 cups strawberries, sliced thin and cut into bite-size pieces
1/4 cup granulated sugar
8 ounces whipped topping
3/4 cup chopped nuts
1 cup whole strawberries or more
Prepare cake as directed. Pour batter into a 9-by-13-inch lightly greased cake pan. Bake as directed. Toss the sliced strawberries with 1/4 cup white sugar; set aside.
Allow cake to cool.
Mix pudding with milk; beat in cream cheese. Spread over the cake. Place strawberries with sugar in colander to remove juice. Spoon strawberries over pudding mixture, followed by the whipped topping. Sprinkle nuts over whipped topping. Top with whole strawberries. Keep refrigerated until ready to eat and refrigerate leftovers.
Note: Slices best when chilled.

Strawberry Tunnel Cream Cake
12 oz prepared angel food cake
3 oz packages cream cheese, softened
14 oz can Eagle® Brand Sweetened Condensed Milk (NOT EVAPORATED MILK)
1/3 cup ReaLemon® Lemon Juice from Concentrate
1 tsp almond extract
1 cup chopped fresh strawberries, thawed and well drained
12 oz container frozen non-dairy whipped topping, thawed (5 1/4 cups)
Additional fresh strawberries, optional
This impressive and elegant dessert holds a creamy surprise inside moist angel food cake. Invert cake onto serving plate. Cut 1-inch slice crosswise from top of cake; set aside. With sharp knife, cut around cake 1 inch from center hole and 1 inch from outer edge, leaving cake walls 1-inch thick. Remove cake from center, leaving 1-inch thick base on bottom of cake. Tear cake removed from center into bite-size pieces; reserve. In large mixing bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in ReaLemon® brand, almond extract and food coloring if desired. Stir in reserved torn cake pieces and chopped strawberries. Fold in 1 cup whipped topping. Fill cake cavity with strawberry mixture; replace top of cake. Frost with remaining whipped topping. Chill 3 hours or freeze 4 hours. Garnish with strawberries if desired. Return leftovers to refrigerator or freezer. Prep Time: 20 minutes

If you go to www.cooks.com, you'll find lots of folks' favorite recipes. The recipes there are submitted by people who really use them, so they work. Look there for your strawberry cheesecake. They have a good search box.
I have a recipe you won't find there. It's for a Finnish everyday dessert called kiiseli (pronounced KEEE-sell-ee.) It's really good to use with berries that are a little older and not so pretty anymore. (If you have lots, you may well end up needing a recipe for the older ones!)
2 1/4 cups water
3 cups berries
3/4 cup sugar
3 tablespoons potato flour (a.k.a. potato starch, and available in an international or an Asian grocery. You could substitute cornstarch in a pinch -- it's not as good in this recipe but it works ok.)
Mix the sugar and potato flour into the water in a big saucepan and stir over medium heat until dissolved. Add the berries and raise the heat a little. Bring to a boil over medium to high heat, stirring frequently. Boil 2 minutes. Remove from heat. Let cool. Serve warm or chilled, as you like. Kiiseli comes out about as thick as pudding. It's usually eaten in a bowl with milk or cream poured on it, but whipped cream or whipped topping would work just fine.

Hah! It is nice for someone to say please and thank you.
Here then is a recipe for strawberry soup. It is often eaten cold with whipped cream or yogurt as a dessert in my country and can be used with any kind of soft fruit of good quality. My favourite is blackcurrant.
Strawberries - hulled
Sugar or sweetener to cover top of strawberries in pan - best put less in now and then add later
Lemon juice
Red coloured juice of some kind - ie grape, cranberry.
Potato flour
Hull all the strawberries - half or quarter if large.
Put in the sugar or sweetener over the top.
Add lemon juice
Add enough juice to cover strawberries and simmer until fruit soft and mushy.
Cool and then either whizz in blender or pass through sieve if you want to get rid of the seeds.
Re warm and add the potato flour with a little water and heat through until thickened to your hearts' desire.
Pour in to pudding bowls and allow to chill.
Whip up cream and a bit of sugar and serve. Perhaps with a light biscuit or something.
Enjoy. As I said, I like black currant but the recipe stays the same what ever fruit or fruit combination you choose.

I have a very simple, yet very delicious recipe for fresh strawberries.
1. Place fresh strawberries in a serving bowl.
2. In a dip bowl mix some lemon juice with powdered sugar to taste (it should be the consistency of salad dressing)
3. Take a whole strawberry, dip it in the lemon/powdered sugar dip and pop it in your mouth
4. Super Delicious!

Pre-heat oven to 350f.
CRUST: Stir together graham cracker crumbs and sugar. Mix in butter
thoroughly and press into a 9" springform pan. Bake 10 minutes. Cool.
Reduce oven temperature to 300f.
FILLING: Beat cream cheese in a large mixing bowl. Gradually add sugar,
beating until fluffy. Add lemon peel and vanilla. Beat in eggs one at a
time. Pour into shell. Bake 1 hour or until center is firm. Cool to room
temperature and then spread with the strawberry glaze. Chill 3 hours.
GLAZE: Blend sugar and cornstarch together in a small saucepan. Stir in
water and strawberries. Cook, stirring constantly, until the mixture
thickens and boils. Boil and stir for 1 minute. Cool thoroughly before
spreading over cheesecake.
