Two purposes...
1.) The main reason is that it is used to swicth off the staring coils/capacitors once the motor is up to speed.
2.) On clothes dryers a centrifugal switch is used as an interlock which supplies power to the electric heater. Since the motor spins the blower in a dryer this ensures that adequate airflow is being generated and allows power to be sent to the heater coils. This is done to help prevent dryer fires.....So if the motor stops spinning or the drum overloaded and not spinning astenough the power to the heater is cut.

If it is an induction wound motor, there is an extra large starting coil in the windings that generates large starting torque and takes a lot of current to do that. Once started to speed the centrifugual force of the weights will open that switch and cut out that induction winding. Then the motor will operate on run winding. This type of motor voltage is always equal to line voltage unlike a capacator start which ive described below.
If it is a capacator start, the capacator in series with a start winding will drive the voltage up in the entire three motor windings and this will greatly increase the starting torque. For example the capacator on line might drive the voltage up near the 500 volt mark to start the motor. The current is also very great in the circuit as this is what is powering the high starting torque. Upon reaching running speed, the centrifugal weights then drop out the capacator + start winding which are in series and the motor then runs on the run windings. at lower current and line voltage.

Check the motor and make sure the shaft turns freely. If it is jammed, the motor will draw its starting current for an extended period of time and blow the fuse. If the shaft turns freely, then the motor may have an electrical problem.
