I find Maris Piper tend to go to 'soup' when boiled. They are too floury. They are very good roast, baked or fried though. Have you tried King Edward's? They are a good all-rounder, or, for taste, try Desirée.

Sure you can but they are much better made into chips and better still roasted especially in goose fat. OK I know that isn't healthy but it is a taste to die for.
If you do want to boul them, don't use too much water and do not over boil because they have a tendency to break up and dissolve a little when overcooked.
