Does anyone have a good combination of vegetables (with the amounts) for a low calorie stir fry to serve four people? (this is to be added with noodles)

i cannot give the exact amounts coz i just add up things to what i cook from whats available. but for low calorie stir fry start with 2teaspoons of olive oil. its better than any other cooking oil or fat. as far as veggies, with noodles, carrot + mushrooms + green peas should taste good. let me know how it turns out, incase you try it...

ITALIAN PASTA STIR FRY

8 Ounces Linguine
1 Medium Zucchini, grated
1 Medium Onion, chopped
2 Medium Tomatoes, seeded
and chopped
1 Cup Fresh Parsley, snipped

2 Large Garlic Cloves, minced
1 Teaspoon Each of Dry Basil
and Oregano Leaves
1/8 Teaspoon Pepper
1 Ounce Parmesan Cheese, grated

Cook pasta in boiling water 8-10 minutes. In wok stir fry zucchini, onion and garlic for 2-3 minutes. Add tomatoes, parsley and seasonings. Heat for 2-3 Minutes. Remove from heat. Mix with the cooked noodles. Sprinkle with the grated parmesan cheese. Serve.

The only thing that adds excess calories to a stir-fry is the oil you fry it in. Any of your favorite vegetables, cut into small strips and stir fried until they begin to go limp (al dente) would be enough. You would want about a cup of finished product per person.

Good stir fry vegetables...brocolli, bok choy, white turnip, zucchini, onion, pepper (any colour), mushrooms (any kind--athough strips of portabello are nicest), celery, purple cabbage, carrots, green peas (sugar snap or snow), garlic to taste. Like I said--any of your favorite vegetables in any combination to give a finished product of about 1 cup per person.

Cheat and buy a pkg of stir fry sauce in the condiments (or spice) aisle--it makes a nice flavoured gravy for the finished product.

A time saving alternative is to buy pkg of Dole Coleslaw salad, and add onion and garlic and mushroom to this and stir fry it. It is quite tasty served tossed with noodles, and saves you having to prepare all those vegetables.
