This is rather a personal preference. You would want it to look "properly spaced" from a vanity to the ceiling but also be capable of letting you use it. Since most vanities are in the 30" range, you will also want to consider if water will be splashed up onto the mirror when using the water and if you want to check your belt buckle while standing in front of it. Most mirrors are used for checking makeup and the facial area.

Hang it so that everyone can see themselves in it. It is a big mistake to hang it too low. If it is not a very tall mirror, just make sure that it is high enough. If it is quite large, then hang it about 6" above the counter.
