Chicken Breasts with Feta and Artichoke Hearts:
4 Chicken breasts, bone in
1 4 oz container feta cheese
1 can artichoke hearts, drained and coarsely chopped (reserve liquid)
2 T olive oil
Salt and pepper
Season the outside of the chicken breasts with salt and pepper. Make a "pocket" in the meatiest part of the breast and season the inside meat with a little salt and pepper. Add feta to artichoke hearts and mix. Stuff 1-2 tablespoons of the mixture into each pocket and reserve the rest. Heat olive oil in a skillet and brown each breast on both sides. Transfer to baking dish and add a little white wine or water to bottom of the pan. Cover and bake for 1 hour at a 350 degree oven. Remove cover during last 10 minutes to brown the breasts. Remove breasts from pan and scrape leftover bits from the bottom. If you can, place baking pan on burner and add reserved liquid. Bring to a boil and add left over feta and artichoke mixture. Add 1/2 cup white wine and 1/2 tsp mustard. Let mixture reduce and pour over your breasts. This is a good recipe with rice pilaf and fresh green beans.
Shrimp and Feta with Tomatoes:
1 lb large shrimp, tail on, but shells removed
1 can plum tomatoes
1 package feta cheese
1 tsp thyme
1/2 tsp salt
1/2 tsp pepper
1/2 cup half and half
In baking dish, mix tomatoes with half and half and thyme. Add salt and pepper. Layer shrimp and sprinkle with feta. Spoon sauce over shrimp and bake in a 350 degree oven until shrimp is pink and mixture is bubbling (check after 35 minutes). Serve with warm french bread and a salad of romaine, radishes, and olive-oil and lemon vinegrette.

This sounds good to me. I'd think you could use many different cuts of steak (cheaper ones, for example) and cook them however you usually cook steak.
2 (6 ounce) filet mignon steaks
3 ounces Roquefort cheese
1/2 cup heavy whipping cream
1 tablespoon butter
pepper
parsley (to garnish)

1. Season filets with pepper to taste.
2. Cut the cheese in small chunklets.
3. Fry the steaks on high heat in the butter, (the way they were intended to be fried before cholesterol was invented); about 5 minutes per side for medium-rare, depending on the thickness.
4. Heat the cream in a small saucepan on medium-high heat.
5. Add the cheese as soon as the cream nears boiling and keep stirring in on medium-high heat; The sauce has to cook for about 5 minutes to reduce nicely; You should end up with a sauce with the consistency of very thick cream.
6. Add chopped parsley for color.
7. Put the steaks on plates and add a very generous ladlefull of sauce over the steaks- Eat- Bliss.

Greek Orzo Salad
1 1/2 cups uncooked orzo pasta
2 (6 ounce) cans marinated artichoke hearts
1 tomato, seeded and chopped
1 cucumber, seeded and chopped
1 red onion, chopped
1 cup crumbled feta cheese
1 (2 ounce) can black olives, drained
1/4 cup chopped fresh parsley
1 tablespoon lemon juice
1/2 teaspoon dried oregano
1/2 teaspoon lemon pepper
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Drain artichoke hearts, reserving liquid. In large bowl combine pasta, artichoke hearts, tomato, cucumber, onion, feta, olives, parsley, lemon juice, oregano and lemon pepper. Toss and chill for 1 hour in refrigerator. Just before serving, drizzle reserved artichoke marinade over salad.

I usually make this one with gorganzola, but have used both blue & feta, as well.
cubed steaks
flour
bread crumbs
seasonings
oil
choice of cheese
chopped garlic(jarred)
mix flour and breadcrumbs with your favorite seasonings(I used alot of pepper and whatever other seasonings strike me that day...lol
heat about 2 tablespoons of oil in frying pan with the garlic(not too much or meat will be soggy)
coat each cubed steak with bread crumb/flour mixture
pan fry to cook each side well....do not cook all the way through.
put all steaks on a cookie sheet
top with choice of cheese
bake on 300 for about 30 minutes (to cook the inside of steak and start melting the cheese into it)
broil for a minute or two (watch carefully) this will finish melting the cheese.
You will LOVE it!! enjoy!

Black & Bleu Chicken Alfredo
INGREDIENTS
3 skinless, boneless chicken breast halves
steak seasoning to taste
2 (10 ounce) containers Alfredo sauce
1 (8 ounce) bottle blue cheese dressing
2 fresh tomatoes, diced
1 (16 ounce) package angel hair pasta
DIRECTIONS
Preheat an outdoor grill for high heat. Lightly oil grill grate. Season chicken on both sides with steak seasoning. Grill 6 to 8 minutes on each side, until juices run clear. Cool and slice.
In a saucepan over low heat, mix the Alfredo sauce, bleu cheese dressing, and tomatoes. Cook and stir until the sauce boils.
Bring a large pot of lightly salted water to a boil. Add angel hair pasta, cook 2 to 4 minutes, until al dente, and drain. Transfer to a large bowl, and toss with the grilled chicken and sauce to serve.
Greek Pizza
INGREDIENTS
1/2 cup mayonnaise
4 cloves garlic, minced
1 cup crumbled feta cheese, divided
1 (12 inch) pre-baked Italian pizza crust
1/2 cup oil-packed sun-dried tomatoes, coarsely chopped
1 tablespoon oil from the sun-dried tomatoes
1/4 cup pitted kalamata olives, coarsely chopped
1 teaspoon dried oregano
2 cups baby spinach leaves
1/2 small red onion, halved and thinly sliced
DIRECTIONS
Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer. Cut into 6 slices and serve.

Stuffed Chicken Breasts
Slice open the edge of a boneless chicken breast to form a pocket. Make sure the pocket is only open on one side. I.e. don't cut all the way through to the other side, and don't cut open the ends. Stuff the pocket with cheese, chopped turkey bacon, and whatever spices you like. Bake as normal.

No. I dislike American cheese very lots. something that truly says "pasteurized processed cheese product" on it, is basically...ugh, that's not nicely worth my time. i admire greater suitable- sharp cheddar the final, yet sharp will do, if greater suitable-sharp isn't available. I additionally like Monterey Jack, havarti, muenster (sp?) gouda...
