I have a load of ground beef in the freezer, but I don't feel like making spaghetti - again!

Any good ideas on how to make patties (not burgers) or some sort of meatloaf?

Really, any ideas will do though.

You can make meatloaf patties. Just mix in your egg, breadcrumbs and the seasonings you like such as Worchestier sauce, ketchup, garlic salt, pepper and shape into patties and fry like a burger. Or just put it in a loaf pan, bake at 350 until done (depending on how big of one you make). Add a bit of ketchup to the top just before taking it out.

I also do an Italian version, using bread crumbs, Italian seasonings and pizza sauce mix into the burger, I roll the burger into a rectangle, add some more sauce and some mozzarella cheese and roll it up, put into the loaf pan and before its done put some more sauce on top, is you like as well as some cheese.

You can do loosemeats, cook the hamburger up, add seasonings you like, I use garlic salt, pepper, add some brown sugar, as much ketchup as you wish (depends on if you like them saucy or dry), some mustard, some Worchestier sauce, and horseradish, heat it all through and serve on buns, you can have a slice of cheese and pickles with them also.

You can make some faux Salisbury steak with burger, make the patties using seasonings and breadcrumbs and a bit of French Onion Soup mix, cook them in a skillet, once they get brown, add some more soup. Serve with rice or mashed potatoes.

You can also cook the beef up, crumbling, add some beef bullion cubes and water so you get a nice gravy going with it and serve that over taters.

ADDITIONAL
I just make up my basic meatloaf recipe and patty that up, you can serve it on buns or with taters. Here is a basic recipe, I would use breadcrumbs instead of the oats, but that's just my preference. I also make them in a skillet instead of baking them, but whatever works!!

INGREDIENTS
1 egg
3/4 cup milk
1 cup shredded Cheddar cheese
1/2 cup quick cooking oats
1 teaspoon salt
1 pound ground beef
2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 teaspoons prepared mustard
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place in 9x13.

In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes

You can make either hamburger patties, or meatloaf and stuff them. For the patties, you just make two half size patties and put a cheese of mozzarella (or other favorite cheese) on one side, then top it with the other side, making sure to pinch both halves together so the cheese doesn't drip out. Then fry it in some oil until it's cooked through.

I like to stuff my meatloaf with gorgonzola. Do the same as the patty, you use half the meat and form it in a meatloaf shape into your pan. Sprinkle cheese down the middle, than spread the other half of the meat on top.

Meatloaf is easy and can be made with a variety of things. I use
1 lb. of ground beef
1 egg
some seasoning...(any kind really...garlic, oregano,)
than I add Italian bread crumbs...(you can also use saltine crackers...) Just enough to make the ground beef so you can shape it.
Shape it into a rectangle or square pan cover with aluminum foil and bake 350 degrees for 45 minutes to an hour.
I usually take the foil off for the last 15 minutes or so...it will get the top nice and brown.

Meatloaf is something you can experiment with...add any kind of seasoning and chopped veg's to the meat..be creative..

Put your ground beef in a saucepan with a wee bit of oil, add diced onions, diced carrots, diced parsnips, peas, beans ...... actually any vegetable.
Then add heaps of black pepper, or black sauce and herbs.
Cook the whole lot up as a (what we call in New Zealand) a mince .... let it cool and put it into containers, then freeze.
It's great for those quick winter meals with potatoes and peas.
Because it's in your freezer ... you can re-freeze again once you have cooked it.
Makes life easy at dinner time when you don't feel like cooking.
You can also do the same recipe but put it in a dish and put mashed potatoes on top and then sprinkle with cheese and sliced tomatoes and put it in the oven on "grill" to melt the cheese into the potatoes.
Darn ... it's 3.00am Thursday morning over here in New Zealand and I'm hungry now.

Woops sorry ..... after you have cooked "all" of this in one big saucepan ... you have to make a thickening, just with flour and water.

I can't understand how you said you didn't want hamburgers again, but nearly every recipe I have seen in your answers have told you "hamburgers".

Anyway try my way ... like I said it's so easy for the winter meals and also when we feel lazy.

Meat Loaf Burgers
INGREDIENTS

* 1 large onion, sliced
* 1 celery rib, chopped
* 2 pounds lean ground beef
* 1 1/2 teaspoons salt, divided
* 1/4 teaspoon pepper
* 2 cups tomato juice
* 4 garlic cloves, minced
* 1 tablespoon ketchup
* 1 bay leaf
* 1 teaspoon Italian seasoning
* 6 hamburger buns, split

DIRECTIONS

1. Place onion and celery in a slow cooker. Combine beef, 1 teaspoon salt and pepper; shape into six patties. Place over onion mixture. Combine tomato juice, garlic, ketchup, bay leaf, Italian seasoning and remaining salt. Pour over the patties. Cover and cook on low for 7-9 hours or until meat is tender. Discard bay leaf. Separate patties with a spatula if necessary; serve on buns.

ok i know you dont want burgers....but i made this one up once and i love it...so here ya go....and you can always just prep the meat this way and turn it into meatloaf...

thai burgers........
What you will need for 4 people is the following:

1 pound of ground sirloin
2 table spoons of peanut butter
1 teaspoon of green curry paste ( thai kitchen)
1 tablespoon of soy sauce
4 table spoons of sweet chili sauce
1 egg
1 bunch of radishes
4 table spoons of mayo
4 buns ( get some nice ones like ciabatta rolls or something!! )
4 cloves of garlic
1 handful of breadcrumbs
couple handfuls of arugula

Ok, so in a bowl combine the ground sirloin, the peanut butter ,the curry paste ,the soy sauce,2 table spoons of the sweet chili sauce, and
the finely chopped garlic. and egg
Now wash those hands and get in there and mix it all up……..then add the handful of crumbs and mix it all up!!
Then shape it into a ball and divide in 4 and shape your burgers
Heat up the grill and grill them depending on how you like your burgers done!

In a small bowl combine the mayo and the chili sauce and mix it up
Toast your buns, slice up the radishes
When the burgers are done ,slather some of the chili mayo on the bun
Some spinach, and radishes the burger and there ya go!

Serve it with a nice salad, what I like is some sliced carrots in a bowl
With some sugar snap pea’s, drizzle with some sesame oil , pinch of salt and some sesame seeds, toss it and done! Maybe some fries what ever!! You make it up!

I got this recipe from a friend who loved chicken parmesan so he came up with this recipe.. His recipe calls for plain breadcrumbs, I use Italian bread crumbs.

Hamburger Parmesan
Preheat oven to 400'
6 servings
1 1/2 pounds of ground beef
1/4 c. flour (may take more)
2 eggs beaten
1 c. italian bread crumbs (may take more)
6 slices of mozzarella cheese ( i have used shredded)
1 can of mushroom pieces, drained
1 jar (16oz) spaghetti sauce
3 or more tbsp of grated parmesan cheese

Shape beef into patties. Coat each patty with flour. Dip in eggs. Coat with crumbs. Arrange in a single layer in a baking pan. Top each patty with mozzarella cheese slice. Place mushrooms on top. Pour on spaghetti sauce. Sprinkle with parmesan cheese. Bake uncovered 25 minutes or until sauce is bubbly and cheese is melted and of course the hamburger is cooked. May have to add a little water to the pan to keep the sauce from drying out.
and spray pan with non stick cooking spray.

If you have a can of cream of mushroom soup, you could make Salisbury steak patties:

Add about 1/4 cup of the soup to the hamburger, mix throughly, add 1 egg, 1/4 cup bread crumbs, seasonings (salt and pepper) and chopped or dried onions. Make into patties (4 or 5). Brown in a skillet, both sides, drain fat and then add remaining soup plus 1/2 cup of milk to make a gravy. Serve with mashed potatoes.

Those mini-meatloaves are great. It's like individual portions. My ex was a caterer and did that for portion control. You just measure out 4 oz. of meatloaf mixture and form into a small loaf and put them on a sheet pan and top as you would a meatloaf. It's really cool presentation too.

My hubby requested meatloaf for dinner tonight. I'm dragging out my 1960's cookbooks to find a "real" one, not anything fancy. I guess we're having retro night!
