Depending on how you count them at least 20.

It depends what you mean by formats.
If you mean recordable formats, there are DVD+R, DVD-R (write once, read many), DVD+RW, DVD-RW (multiple read and write) and DVD-RAM (a multi read and write format usually used like a small hard drive for computers).
In addition there is the DVD-ROM disks (literally, read only memory) produced for commercial sale.
To these you can add DL (or double layer) DVD-R and DVD+R.
If you include types of DVDs sold commercially, there are predominantly normal DVDs and DVD-A (audio), but other non-standard disks designated DVD-VCD and DVD-SVCD exist.
If you get into types of formats which can be coded onto DVD the number gets quite large. Some examples, DVD-MP3, DVD-JPEG, DVD-WMA, DVD-Divx.
See the links for info on the main "formats".
