Put pens, paper, and a wishing well on the tables for centerpieces. Guests can put advice, best wishes, little notes, etc...
Rather than have a wedding cake and then a sheet cake for the guests, use the cake as the centerpiece. Each table will have a cake on a stand with a few flowers on top and tea candles around it. The table for the bride and groom will have a two tiered cake instead of one
Another great and useful idea for a centerpiece is a collection of unique champagne glasses. Thrift stores and garage sales often have a lot of these at very reasonable prices, and with a little cleaning they can look as good as new. Arrange the flutes on the tables in random patterns as a centerpiece. They don’t have to match, they just have to play well together. The unifying touch? I have 2 ideas but it depends on your budget.
1 - a round mirror the size of a big plate (im hoping your tables are round?) then you put a fishbowl like bowl on it, rose petals ( i know you said you dont like flowers but it looks classy and only a few white petals) and glitter in the water. If you want you can buy little crystal tall swans and put them in the middle, of the glass or next to the bowl. And lots of glitter around the mirror.
2. This is my favourite and it looks great, if u want a picture of how it looks i'll be glad to email it to you. A tall vase, slim in the middle and wide at the mouth, put in 1 white lily, a white rose and 1 filler (any kinda green stem) colour the water as to your colour theme. If you dont want flowers u get those spiral twirls already sprayed with glitter, and some come natural brown like straw. This idea always works. Its very simple but VERY effective.

Buy those sparkley rocks & crystals at the craft store & just "pour" some directly in the center of the table. You could mix in bigger crystals for effect, even lilttle mirrors. Do em in your colors. Easy, cheap, fun plus no flowers & no candles

When is the wedding?
Winter- Crystal bowls, filled with fake snow, with crystal tree ornaments (round and snowflake) that match the color of the wedding for party favors in the bowl. Plastic snowflakes sprinkled on tables.
Fall- Sprinkle fall colored fake flower petals or fake maple leaves around the center, put a crystal bowl in the middle, filled with some sort of candy for the guests (color coordinated of course).
Spring- Glass or crystal roses can be found in a Hobby Lobby or another craft/decor store. You could use them as the center piece, then sprinkle petals of that colored rose (real or fake) around the rose on each table (different roses on reserved tables/head table would be nice... white for head table, pink for reserved, red for guests?)
Summer- Crystal bowl filled with sand (bought at craft store to match wedding colors) and filled with sand dollars and shells for favors. Sprinkle small, colorful oyster/clam shells on the table.

I did this for a friends reception. It is old and hackneyed, albeit different. Have You given any thought to the idea of using crystal Fruit Platters? Their are not too intrusive. There are plenty of color combination opportunities. Fruit is seasonal (so He wont forget the month). They are relatively inexpensive and they never get wasted. And they look good. Pineapples, Peaches, Apricots, Grapes, Apples, Pears......get the idea?

How about bowls of water with floating candles or gerbera heads? It's a new twist on flowers and candles? Or how about a beautiful plate piled high with lemons and limes? Or a plate of shiny apples? I am using those twisted twigs in a tall vase, it is simple and looks very effective and dose not cost much at all.

Or....you could have gift boxes decorated beautifully with riboons and beads.
