Raw, toasted, puréed or ground into flour, nuts add excitement and flavor to your culinary creations. While we tend to use nuts as an enhancement to our recipes or for a quick snack, nomadic people treasured wild nuts as an important source of protein. But they are also high in fat which may explain why they have lost ground to legumes and grains as a meatless protein source. Except for chestnuts, which contain about 8%, the calories from fat in nuts range from 70% to 97%. However, the reputation nuts have acquired as a fatty food is unfair since most of the fat in nuts is unsaturated and has not been shown to promote weight gain if consumed in moderation-a small handful five times a week.

These days, you hear about good fats and bad fats the way you hear about good cops and bad cops. One's on your side, and one's going to beat you silly. Oreos fall into the latter category, but nuts are clearly out to help you. They contain the monounsaturated fats that clear your arteries and help you feel full. All nuts are high in protein and monounsaturated fat.
But almonds are like Jack Nicholson in One Flew over the Cuckoo's Nest: They're the king of the nuts. Eat as much as two handfuls a day.

Nuts and seeds are very good for you, but if you are going to eat a lot of nuts dont eat a lot of oily or salty ones. Stick to almonds, brazil nuts, walnuts, pistachio's, pumpkin seeds, sunflower seeds. Peanuts tend to be very oily and salty, theyre more fattening.
Nuts have natural oils in them which we need in our diet.

Some airlines have switched to pretzels rather than peanuts as snack handouts because they are cause allergies (sometimes fatal).
Many children today don't just respond to nuts with a sniffly nose or scratchy throat; they are literally deathly allergic. In fact, nut allergies are among the most lethal; they cause 100 to 200 deaths every year, mostly in children and adolescents (it is more prevalent in boys than girls), and thousands of hospital visits. Nut allergies make themselves evident in young children and tend to persist into adulthood.

Nuts and seeds
Good: nutrients esp. minerals
Bad: lectins, omega-6, anti-nutrients
Macadamia and almonds are very low in omega-6's
Due to high content of what is bad nuts are healthy in small amounts and when processed properly
Native groups processed nuts and seeds to remove antinutrients present in them (long soaking in salt water, grinding into powder & roasting)

All nuts are great. Cooking them or roasting destroys the oils in them that contain all the good stuff, so those roasted peanuts for instance are literally junk food.

They do bring a good balance to a healthy diet, but they are very fattening.
To eat with caution => MODERATION!
