Depending on budget try a Rose Champagne. Some of the best are Ayala, which is very elegant indeed, Louis Roederer Rose is stunning but about £60.
If you wish to stay with a Blanc Champagne, ask for one that has a good percentage of Pinot Meunier in the blend as this is the grape which gives younger Champagnes softness and finesse.
Most Champagnes do go with strawberries, and my personal choice would be:
Billecart - Salmon Cuvee Elisabeth, which is their Rose.

Unless you are a wine and champagne snob, just pick the champagne you would like to drink if you were not eating strawberries. Chances are, you will like the pairing. If you are not sure, go dryer if the berries are sweet (or covered in chocolate or sugar) and sweeter if they are not.

It's personal taste.

I like prosecco or cava...there is also an almost baby-powder flavored sparkling wine made by toad hollow vineyards called Risque. It has a fraction of the alcohol, and is very yummy.
