CARAMEL RICE KRISPIE BARS
2 (10-oz.) bags miniature marshmallows
1-1/2 sticks margarine
15-oz. box rice krispies cereal
14-oz. bag Kraft caramels
1 can sweetened condensed milk
Butter bottom and sides of 2 large jelly roll pans and set aside. Unwrap caramels and put in glass bowl. Pour sweetened condensed milk over caramels and set aside. Melt marshmallows and margarine together in large bowl in microwave until marshmallows are almost melted. Remove from microwave and stir until completely melted. Stir in rice krispies and stir with rubber spatula until evenly coated. Put half of rice krispie mixture in each pan and pat down firmly with buttered hands. I use a Pampered Chef Mini Roller to roll the mixture out evenly in each pan. Working quickly, melt the caramels and sweetened condensed milk together until caramels are almost melted. Beat with mixer until completely melted and blended. Pour over rice krispie mixture in one pan, spreading evenly. Then very carefully turn the other pan of rice krispies mixture upside down over this one, aligning pans and letting this layer fall out (help if necessary) to cover the caramel layer completely. Cover and refrigerate a couple hours to set the caramel.

Shrimp and Linguine
1/2 pound linguine
1 pound (or less) shrimp, peeled and deveined
4 garlic cloves, peeled and pressed through a garlic press
1 shallot, finely chopped
olive oil
salt
pepper
1/2 teaspoon red pepper flakes
1/2 cup of white wine
5 tablespoons unsalted real butter
1/4 cup italian parsley, chopped
Cook pasta according to directions on the box. Meanwhile salt and pepper the shrimp. Heat some olive oil in a large skillet over medium high heat. Cook shrimp until they are pink, do not overcook because they will have the consistency of rubber. Remove them from the skillet and add the garlic and shallots. Cook and stir for a few minutes and turn down the heat if you need to. Be careful not to burn the garlic. Burned garlic tastes BAD. Add the wine and red pepper flakes and let it cook down for a couple of minutes. Melt the butter and stir. Taste it and see if it needs more salt and/or pepper. Finally, add the cooked pasta and toss with the chopped parsley.

Pineapple Cream Cheese Fluff
• 1 8 oz package cream cheese, slightly softened
• 1 can crushed pineapple, do not drain
• 1 large package instant vanilla pudding
• 1 12 oz bin of CoolWhip
Place cream cheese in medium sized bowl and mush into chunks with fork. Mix in crushed pineapple - with the juice. Add the pudding and mix together and then fold in the CoolWhip. Pour into a serving bowl and refrigerate. May also add drained mandarin oranges.

Clam Spaghetti [8 servings ; ready in 35 min]
1 (16 ounce) package uncooked spaghetti
2 tablespoons olive oil
2 cloves garlic, chopped
2 (6.5 ounce) cans chopped clams with juice
1/2 cup finely chopped fresh parsley
1/2 cup grated Parmesan cheese
fresh parsley, for garnish
Bring a large pot of lightly salted water to a boil. Add spaghetti, cook for 8 to 10 minutes, until al dente, and drain.
Heat the oil in a skillet over medium heat, and saute the garlic 1 minute, until tender. Mix in the clams and juice. Cook, stirring occasionally, until liquid is reduced to about 1/2 cup.
In a large bowl, toss the spaghetti with the sauteed clams, chopped parsley, and Parmesan cheese. Garnish with parsley sprigs to serve.

In forty minutes or less: boile water for mac and cheese. While doing that brown some ground beef with onions, salt and pepper. When all is done layer mac and cheese in baking dish then an layer of beef. Cover with parmasian cheese and american cheese then layer the rest of the mac and cheese then the rest of the beef. sprinkle with parmasion cheese and american cheese and bake for 15 minutes.

Lemon Pillow Cake
1 white cake mix
1 can lemon pie filling
Mix cake as directed on box and pour into a greased 9x13" pan. Place spoonsful of lemon pie filling in blobs over batter. Bake as directed on the box. Let cool completely. Cake batter covers blobs, so there will be pockets of lemony filling inside.
Frosting
1 can ready to spread lemon flavored frosting
1 tub of Cool Whip
Mix frosting and Cool Whip together and spread on cake. This does need to be kept refrigerated.
**(This recipe works well w/ chocolate cake and cherry pie filling as well!)

Chocolate Pudding Cake
3/4 cup granulated sugar
1 cup plain flour
1/4 teaspoon salt
2 teaspoons of baking powder
2 Tablespoons cocoa
½ cup milk
1 teaspoon of vanilla
3 Tablespoons melted, cooled, margarine
Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish (Pyrex bowl or 9”x15” dish).
TOPPING:
½ cup of granulated sugar
½ cup brown sugar
1/4 cup cocoa
Mix topping sugars and cocoa together and sprinkle dry ingredients over batter. Pour 1 ½ cups of tap water over all. DO NOT STIR.
Place in oven and bake at 350ºF for 45 minutes or until topping is done. (In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom.)
Serve in bowls with spoons. Serves 6-8 people. Good with vanilla ice cream or cool whip.
