Chocolate Chipotle Brownies
Recipe By : RisaG
i n g r e d i e n t s
3/4 cup butter or margarine
6 ounces semi sweet chocolate -- broken into small pieces
3 ounces unsweetened chocolate
3 large eggs
3/4 cup sugar
1/2 cup brown sugar
2 teaspoons vanilla extract
1 tablespoons chipotle powder
1/2 teaspoon cayenne powder
1/2 teaspoon ground coriander
1/8 teaspoon ground cloves
1 cup all-purpose flour
1/2 cup raisins -- soaked overnight in beer
1/2 cup hazelnuts -- toasted & chopped
confectioners' sugar -- for garnish
d i r e c t i o n s
Put the butter and chocolate in a microwaveable dish
and melt them together on HIGH for a few seconds at a
time until the chocolate was melted. Stir well. Cool.
Beat the eggs in a mixing bowl until they start to
thicken. Add the sugars. Continue beating until the mixture
is light and fluffy. Stir in vanilla and chocolate mixture.
Lightly toast the spices in a skillet over low heat, stirring
often and don't allow to burn.! Combine the spices and flour in a bowl with a whisk.
Gently stir the dry ingredients into the wet ingredients. Gently add the
raisins and hazelnuts, stirring just until combined. Don't
over-mix.
Pour the mixture into a greased and floured 9" round pan.
Bake in a 350°F oven just until set 25-30 minutes. Cool
in the pan. Turn out and cut into wedges. If desired,
dust with confectioners' sugar and serve with vanilla
ice cream.

I made some Mexican brownies this past weekend that were just awesome. The recipe is in the current issue of Chili Pepper magazine. It's a simple brownie recipe but with ancho chile powder and cinnamon added.

well, there alot of desserts out there. i am an avid chef and have directly made many mexican dessets. well, i'm mexican so that might have something to do with it. so desserts that i like to make are flan, bunelos, "kicked up" fondue, & the list goes on. where i resort to when i need a new recipie is foodnetwork.com there are many desserts, and the chefs interpreation opf the dessert. its very easy. have fun!

Mexican Rice Dessert (Arroz a la Cajeta) [5 servings]
1 1/2 cups brown rice
2 cups milk
2 strips cinnamon bark (not complete rolls)
1 cup cajeta caramel sauce (bottled Mexican caramel sauce available in Mexican food stores)
1 cup chopped pecans or walnuts
Soak rice in hot water for 15 minutes.
Drain and place in a cooking pot.
Add milk and cinnamon.
Simmer on stovetop until rice is well cooked.
Discard liquid by sieving.
Reserve rice.
Heat the"cajeta" on a double boiler until it thins somewhat and cook for 3 minutes.
Remove from stovetop and add the chopped nuts.
Incorporate cajeta and nut mixture to the rice.

Mexican Sugar Cookies
2 1/2 cups shortening
1 cup white sugar
1 teaspoon anise seed, ground
2 eggs
6 cups all-purpose flour
1 tablespoon baking powder
1/2 tablespoon cream of tartar
1/2 teaspoon salt
1/4 cup orange juice
3 tablespoons ground cinnamon
1 cup white sugar
Preheat oven to 350 degrees F (175 degrees C).
Beat shortening until light and fluffy. Add one cup sugar, and anise seed. Mix until creamy. Add eggs and mix well. Add flour, baking power, cream of tartar, salt and orange juice. Mix well.
Knead dough until smooth. On lightly floured surface, roll to 1/2 inch thick. Cut using cookie cutter into different shapes. Bake until light brown, 5 - 8 minutes. Roll cookies in mixture of 1 cup sugar and 3 tablespoons of cinnamon while still warm.

Capirotada(simple bread pudding with peanuts, bananas and raisins)

Fried ice cream. Bread ice cream balls in cinnamon sugar and corn flakes, then deep fry and serve topped with honey and whipped cream. YUM!!!!

Mexican Orange Candy
This is a Christmas specialty.
1 C. sugar
1 1/2 C. milk
2 C. sugar
Grated rind of two oranges
Pinch of salt
1/2 C. butter
1 C. nuts
Melt the first cup of sugar in a large vessel over medium heat while the milk is scalding in another saucepan.
When the sugar is melted (stir continually and watch to keep from scorching), add the hot milk, all at once, stirring. Add the other two cups of sugar to this mixture. This will cause a hard ball in the mixture, but keep stirring until dissolved. Cook until it forms a hard ball in water or use a candy thermometer. Just before it is done, add grated orange rind, salt, butter and nuts. Remove from heat and beat until creamy. Pour into a buttered 9-inch square pan to cool. Cut into squares when cooled.
Mexican Flan
6 eggs
1 can condensed milk
1 c regular milk
1 T vanilla
1 T lemon juice
1/2 c regular sugar
1 c cherimoya, peeled, seeded, and chunked or your
favorite fruit garnish
PREPARATION METHOD
Mix all the ingredients (except the sugar) using a
mixer.
In a small pan (at medium heat) melt sugar until it turns
caramel-brown.
Separately, cover the bottom and sides of a pie dish with
the caramel-brown sugar, before it cools off, add the
mixture you prepared with all the ingredietns and
cover the dish with aluminum foil.
Place the pie dish with the mixture and the caramel
in a double boil pot.
Put the double boil pot in the oven at 400 degrees F and
cook it until your inserted knife (test) in the middle
of the mixture comes out clean.
It might take an hour of cooking time.
Let it cool for a few minutes and turn it over in
a flat dish or tray.
Suspiros
The combination of chocolate and cinnamon is typically
Mexican.
Ingredients
3 tablespoons fat-free cocoa powder
1/4 teaspoon ground cinnamon
2 - egg whites, at room temperature
1/4 teaspoon cream of tartar
1/2 cup (3 1/2 oz/100 g) natural cane sugar
1 teaspoon pure vanilla extract
Mexican Suspiros
Preparation - Estimated cooking time: Over 60 minutes

1 Preheat oven to 300 degrees F (150 degrees C). Line
a baking sheet with parchment paper.
2 Sift together cocoa powder and cinnamon onto a piece
of wax paper.
3 With an electric mixer, beat egg whites and cream of
tartar on high speed until foamy. Slowly add sugar,
beating until soft peaks form. Reduce mixer speed to
low and slowly sprinkle in cocoa-cinnamon mixture.
Beat in vanilla. Increase mixer speed to high and beat
until stiff peaks form.
4 Transfer mixture to a pastry bag fitted with a
1/2-inch (1.25-cm) star tip. Holding the pastry bag
perpendicular to the prepared baking sheet, pipe 1
1/4-inch (3-cm) rounds, lifting the bag straight up
after piping each one.
5 Bake for 20 minutes until dry and lightly colored.
Turn off oven and leave cookies undisturbed for 1
hour.
6 Remove cookies from parchment.
Mexican Chocolate Muffins
Time: 35 minutes (15 min prep, 20 min cooking)
Makes: 12 muffins
3/4 cup cooked lentils (see note)
1/2 cup brown sugar
1/2 cup sugar
1/2 teaspoon salt (omit if using canned lentils)
1 teaspoon cinnamon
2 tablespoons unsweetened cocoa
1/2 teaspoon baking soda
1/8 teaspoon baking powder
3/4 cup flour
1 teaspoon vanilla extract
2 eggs
1/2 cup cooking oil
1/2 cup chocolate chips
1/2 chopped walnut
1/4 cup confectioners' sugar
1. Note on using lentils: If using canned lentils, drain first and omit salt; if using dry (my preference is dry red lentils) measure 1/3 cup rinsed lentils into saucepan, add 2/3 cup water and bring to boil; reduce heat and simmer 20 minutes (may need to add a small amount of water) cool and measure.
2. Mash lentils with a fork in mixing bowl.
3. Add eggs, oil, sugars, and vanilla extract to lentils.
4. Mix just to combine.
5. Mix flour, baking soda, baking powder, salt, cocoa and cinnamon in separate bowl.
6. Add dry mixture and blend until combined.
7. Fold in chocolate chips and walnuts.
8. Pour into greased muffin tins.
9. Bake at 350 degrees F for 20-25 minutes.
10. Let cool 10-15 minutes for easy turn out.
11. Dust tops with confectioners sugar.

empanadas are good..fill with pineapple, mango, any preserves you like and dipp in cinnimon sugar. tres leches cake is
thy these...they would be perfect!!
