4 salmon fillets
1/4 C. peanut oil
2 Tbsp. soy sauce
2 Tbsp. balsamic vinegar
2 Tbsp. chopped green onions
1 clove garlic, minced
1 1/2 tsp. brown sugar
1 tsp. crushed red pepper
3/4 tsp. ground ginger
1/2 tsp. sesame oil
1/4 tsp. kosher salt

This dish is on the spicy side so I don't want something that is equally as spicy to go with it. If you give me ideas please include your favorite recipe for that idea. Thank you!

A nice side with salmon, regardless of how it's seasoned, is sweet potato slices (skins on), seasoned with crushed rosemary, and roasted at 400 deg.

Spread a little olive oil on a cookie sheet, place sweet potato slices on pan and turn over so both sides get coated with a little of the oil. Sprinkle each with the crushed rosemary, reserving enough to put on the other side after turning the slices. After about 10-12 or so turn them over and sprinkle other side with rosemary. Bake another 10-12 mins. Check for doneness... you don't want them to get too dark... just browned on each side. salt & pepper to taste if you like.

The main dish sounds wonderful - I would definitely cook on the grill!!

I would serve with a wild rice made with mushrooms & dried cranberries, grilled asparagus, homemade garlic bread & a nice glass of wine......Dessert could be a key-lime cheesecake!!

I would make a fresh spinach salad, with bacon bits, egg and red onion, thinly sliced with a balsamic dressing (Newmans Own or Ken's).

I would also serve crusty French bread on the side.

Couscous, W/ grilled fresh squash, sliced carrots, broc., caul., drizzled w/ ex olive oil and McCormick Italian Herb Seasoning Grinder to taste.
