I'm not sure about chicken and turkey, but I was looking for some luncheon meats the other day and found kosher bologna and salami. The brand is Hebrew National (like the hotdogs).
I suppose you could always find a kosher butcher somewhere. You might also be able to find it in specialty grocers, but they are more inclined to carry organic and natural products.

Seriously now. Unless you live in a VERY small town, you should have a deli around. If so, give them a call. Also, the very large grocery chains (Winn-Dixie, Piggley-Wiggly, etc.) will all have a kosher section.

Packaged foods have symbols on them that indicate they are kosher:

Look closely at the packaging to find one.
For fresh sandwich meat, you might have to go to a kosher deli (look in the phone book or do a web search).
