Was wondering what average rate per person cooking classs go for?

It depends on where you are and what you are planning on offering. If you are going to send the clients home with food or feed them there you can charge a little bit more.

I used to do cooking classes and charge between $20 - $40 for each class.

It depends. A nice restaurant here charges around $35, or you can take them at the Culinary Insitute upvalley for $250+.
