The absolute center temperature isn't really relevant because it isn't meat. How do I do this?

I would think the internal temperature is relevant.

For the internal temperature to reach 160F, then the chicken breast surrounding it has to be at least 160F.

But you can spot check it in just the meat only, but you still want the filling to be at temperature (160F) or you'll end up with a cross-contaimination issue.

you should be inserting the meat thermometer in to the thickest part of the meat not the center of the chicken.
