For me, since I'm lactose intolerant Blending coffee ice cream + milk = upset stomach. lol.
If you have any liquid flavorings, you can make a minted coffee or a vanilla coffee. Of course, you're going to add ice so the drink will have some body to it.
Adding ice cream would do too.
Just imagine you're in Starbucks charging $6 a drink.

Well, here's the ice cream Ingredients 2 cups milk 1 cup sugar 6 egg yolks, lightly beaten 1/3 cup instant coffee 1/2 teaspoon pure vanilla extract 1 pint heavy cream Method Beat milk, sugar and egg yolks in the top of a double boiler until frothy. Set over simmering water, add the coffee and heat 15 minutes, stirring now and then at first, constantly toward the end. Cool, add vanilla and cream. Freeze in a crank – type freezer [hand or electric] or automatic ice cream machine, following the manufacturer’s directions. If I were you I'd take a few scoops of this ice cream and plop them in a blender with a shot of Khalua and a little Half & Half.

Coffee ice cream + milk sounds yummy; I'm sure it'll end up like a coffee flavored milkshake of some sort, depending on the proportions of ice cream and milk you add. You could try adding some chocolate syrup or chocolate ice cream, since coffee and chocolate go well together.
Fruit smoothies are always fun. They typically consist of three major components:
-some sort of base for texture (ice, ice cream, yogurt)
-fruit for the flavoring
-a liquid for consistency (juice, milk).
With smoothies it's usually up to the drinker's preference of what they want, nearly anything goes; experiment until you find something you like.

Your own imagination is the only limit on this one. You could add a nice liqueur to that mixture as well, like Kahlua,or Frangelico. Orange juice and peaches with some sort of sherbert are a good combo. You can find frozen fruit combos the freezer section at your local store to use as your fruit base, you can even blend your favourite juices with ice creams or ice cubes for slushie type drinksIf you're a coffee lover though, you can use your leftover coffee as one of your flavours, I'd advise you to make it a bit stronger then normal, because whatever you mix with it will dilute it. I love to use the hazelnut flavoured coffee when I use my blender...its got a little more ooomph than plain coffee though. Congrtats on the blender though, you'll especially love it in the summer
