How funny my family is eating beef stroganoff tonight.
EASY BEEF STROGANOFF
1 to 1/2 pounds stew beef
1 package egg noodles
2 cans cream of mushroom soup
6 oz sour cream
mushrooms
Prepare noodles as directed. Fry beef and mushrooms in skillet with 2 tablespoon oil.
Drain noodles add beef (can add oil too), soup and sour cream.
Served with Baked french fries drizzled in olive oil and Parmesan cheese.
Pea salad (can peas, mircle whip and cheese stirred together and chilled)

Beef stroganoff isn't the best thing to eat if you are trying to make healthy meals. Usually the meat is very lean, but the sauce that coats the beef and pasta is rich, fattening, and full of calories. You could try using low fat cheeses, milk, and sour cream to cut down on the fat and calories. Mixing in fresh vegetables is certainly a good idea as well. Our family favorite mix ins include broccoli, green beans, and sugar snap peas. Also consider making whole wheat pasta instead of egg noodles. You will save a lot of calories on the pasta by doing this.

Side Dishes
Egg Noodles are a must with Beef Stroganoff. Boil one quart of water with a pinch of salt. Once boiling add two cups of dry egg noodles. Reduce heat to a roll and cook noodles for about 15 minutes, or until tender. Drain and serve. Reduce fat by using yolkless noodles.
Frozen broccoli or a frozen vegetable mix such as broccoli, carrots and water chestnuts. Place two cups of vegetables in a microwave safe dish, cover and cook on high for five minutes. Let stand for one minute, carefully remove lid to let trapped steam escape, serve.
Fresh fruit makes a nice dessert after this rich meal. Try a mix of 1 cup strawberries and 1 cup blueberries. Simply clean, de-stem and slice in half the strawberries. The blueberries simply need to be cleaned. If you like, add 1/8 cup of fat-free non-dairy topping.

I try to keep side dishes simple when I'm fixing something as rich and heavy as Stroganoff. A lettuce wedge with a few chunks of tomato and a drizzle of your favorite viniagrette dressing is about as easy as it gets. Green beans almondine is good, too, or steamed asparagus.
Steamed broccoli drizzled with a little lemon butter would give a nice tart contrast to the richness of the main dish. A simple compote of mixed fruits is another good side dish.

Larousse says noodles
Stroganoff is made from filet steak,sauted , mushrooms,and shallots,also sauted,double cream and lots of parsley
It is not a slow cooked oven dish,it was invented for Russian royalty,who didnt eat "stewing beef"A good chef can do this in a flambe dish tableside
