Grilled Shrimp Capressa Wrap
I think I may make this for dinner tonight.
Per person "rounded" ingredient list
1/4 cup shrimp peeled and de-veined
3 pieces "BABY" mozzarella, sliced
4 large FRESH basil leaves
1 Roma tomato sliced
1/8 cp Sweet Red pepper julienned
3 or 4 fresh spinach leaves
Balsamic Vinaigrette
Red "tomato" wraps
or
Green "Spinach" wraps
Marinade shrimp in heavy garlic (minced) and lemon juice for a cpl of hours if possible.
Lay basil, sliced mozzarella and tomato on a plate, drizzle with vinaigrette, cover, chill in fridge for an hour.
Grill Shrimp on BBQ (this will not take but a min or 2 per side)
Shrimp can be grilled ahead of time and placed in the fridge in a tight container with a moist paper towel across the top (prohibit drying)
Place slightly warmed (mic-road) wrap on plate, cover the begin layering center with fresh basil, followed with sweet pepper, then mozzarella, spinach and shrimp.
Drizzle with balsamic vinaigrette.
Wrap like a burrito with 1 end open.
Great served with a seasonal fresh fruit salad.

Chicken Wraps:
1½ hours 1 hour prep
8 servings
2 garlic cloves, crushed
1 orange, juice of
2 tablespoons light soy sauce
3 tablespoons honey
1/2 teaspoon chili powder
8 boneless skinless chicken thighs
8 flour tortillas
8 tablespoons mayonnaise
iceberg lettuce, to taste
1. Place the garlic, orange juice, soy sauce, honey and chile powder into a bowl and mix well. Adjust seasonings, adding more chile powder if you wish.
2. Trim any excess fat from the chicken thighs and place into a plastic zip-loc bag. Pour the honey mixture over the thighs and turn them to coat well. Close the bag and marinate the thighs in the fridge for 1 hour.
3. Preheat oven to 425°. Place the thighs, with the marinade, into a shallow roasting pan. Roast for 25-30 minutes, turning halfway through and basting with the glaze, until the chicken is tender and slightly blackened on the edges.
4. Remove the chicken from the pan and leave to cool. Cut the chicken into strips and set aside.
5. Lay a tortilla on a clean work surface. Add 1 T. of mayo into the center and spread out a little. Add iceberg lettuce (to taste) and top with several strips of chicken. Fold the tortilla up over the filling, fold in both sides of the tortilla, then roll up all the way. Wrap in saran wrap or waxed paper to secure rolls. Repeat to make 8 rolls.
6. Make these the day before a picnic or for boxed lunches. YUM!

Halibut is a nice fish you could make a great fish wrap from...also salmon might be pretty tasty.
Good summer veggies to consider are bell peppers (all colors!), cucumber, tomato, jicama...
Dressings...? Sour cream is a nice cool refreshing choice, ranch an old favorite...maybe some Tzatziki White Sauce (the stuff they use on gyros)...

i like peanut butter and bananas and right here's my favourite -- spread peanut butter over one area of a tortilla. position an finished (peeled) banana at one end and roll up the tortilla. delicious. in case you pick it to seem extra appetizing, decrease it in 3/4" rolls -- seems very distinctly, spiral shaped. My different favourite is to layer the tortilla with shredded lettuce. Then a skinny layer of tuna salad, and then roll up. also, cream cheese and jelly are good, distinctly for breakfast with a cup of espresso. My husband's favourite is to spread the tortilla with sprouts then a layer of egg salad and roll that up. also, scrambled eggs, cheese and writer 1st baron verulam -- his absolute favourite yet no longer very healthful! have relaxing!

Mix 1 block softened cream cheese and jar of marshmallow fluff. Warm of tortillas a bit. Spread mixture on tortilla, top with thinly sliced fruits like strawberries and bananas and roll. And there you go, dessert!

Garden Vegetarian wrap
INGREDIENTS
4 wraps
Corn cut from 2 ears of corn on the cob
1 large ripe tomato, chopped
1 bell pepper, diced
1 summer squash, diced and steamed until tender
Mixed salad greens, left raw, or braising greens, coarsely chopped and lightly sautéed in olive oil until wilted
1/4 cup oil-cured black olives, cut in half
Salt and freshly-ground black pepper to taste
1. In a bowl, combine all ingredients. Divide filling evenly among 4 wraps, fold ends in, then roll. Cut each wrap in half, and serve.
Avocado Wrap
Ingredients
1 California Avocado, sliced
1 Habanero burrito tortilla (plain if you prefer)
Hummus (flavored, use your favorite)
Alfalfa sprouts
3 to 4 thin slices smoked turkey breast
3 slices domestic swiss cheese
½ tomato, sliced and halved
salt and pepper to taste
Instructions
Spread hummus thinly over the entire tortilla.
Layer turkey and cheese over 1/2 of the area.
Place vegetables and Avocado in a narrow vertical line about centered on the meat/cheese.
Sprinkle salt and pepper over the entire tortilla to taste.
Roll tightly, with vegetables in the middle of the finished roll. Enjoy!
Crab Salad Wrap
2 (8 ounce) packages imitation crabmeat, chopped
1 tomato, chopped
1/2 cup green onions, chopped
1/2 cup green peppers, chopped
1 cup nonfat yogurt, plain
1/2 cup fat-free mayonnaise
3 ounces feta, crumbled
1/4 cup cilantro, chopped
1 garlic clove, minced
1 teaspoon black pepper
lettuce
tortillas
pita bread
Mix first seven ingredients. Chill for atleast one hour. Put on lettuce or in a wrap or in pita bread. *imitation crab meat is usually made from cod but you could use any fish you want

Tuna fish wraps. Shrimp and cucumber wraps, cream cheese and cilantro wraps, any fish, tarter sauce and potato chip wrap, chipolte sauce shrimp and lettuce wrap., crab, lime and avocado wrap.
Choose a fat for your dressing from: olive oil, mayonnaise, peanut butter, veggie oil, etc. Then pick a sour from this list: lemon juice, OJ, apple cider vinegar, etc. Then add salt, pepper any other spice like hot sauce and something a little sweet like: honey, sugar, apple juice, pineapple juice. Good Eating!

mm I make wraps with fresh spinach, a lilttle bit of cheese, tomato's, mushrooms, red onions, and add some ranch or honey mustard dressing. I also wrap the wrap in that glade press and seal plastic wrap.. holds a wrap together good for lunches or trips, ya know!!
