i have a smoked sausage i need to cook before it goes bad any quick and easy jambalaya recipies?

Chicken and Sausage Jambalaya

1/3 cup butter
1 small onion, diced
1/2 green pepper, diced
2 stalks celery, diced
2 cloves garlic (I usually use 5-6)
1 bunch scallions, trimmed and chopped
2 chicken breasts, cubed
1 1/2 cups sliced andouille sausages or kielbasa or smoked sausage
1 (28 ounce) can canned diced tomatoes, with juice
1 cup chicken broth (1/2 can)
1/4 teaspoon cayenne pepper
1 bay leaf
1 cup brown rice

Melt butter in deep skillet or saucepan.
Saute onion, pepper, celery and garlic and cook over medium-high heat until tender.
Stir in scallions, chicken and sausage.
Saute 5 minutes.
Add remaining ingredients except rice, then reduce heat and simmer 10-15 minutes.
Stir in rice, cover and cook 45-60 minutes or until rice is tender.

15 MINUTE SMOKED SAUSAGE JAMBALAYA

1 c. instant rice
1 lb. smoked sausage, cut into chunks
1 med. onion, chopped
1/2 c. green pepper, chopped
1/2 c. celery, sliced
1 (8 oz.) can tomatoes
4 drops hot pepper sauce
1/4 tsp. pepper

Cook rice according to directions. While rice is cooking, spray large skillet with butter flavored Pam then heat over medium heat. Add sausage, onion, green pepper and celery and saute until vegetables are tender. Add tomatoes, hot pepper sauce and pepper. Drain cooked rice and stir into sausage mixture. Cook over low heat, stirring frequently, until thoroughly heated. Makes 4 to 6 servings.

ok yes as a matter of fact i do i'm from the south, louisana so i know the perfect recipe cook you some rice, while it's cooking make you a gravy with some chicken bullioun or beef i would rather beef, pepper, salt cajun seasoning, cook some bell peppers real good with onions garlic suate it all when rice is done put it all together then add you sausage cook till it's done make shur the rice has soaked up the gravy well most of it i don't measure because i can cook to perfection so anyways i hope you like it i really love it if i was nearby i would cook it for tyou or whatever but i hope it turns out well for you like it did for me i made this recipe my self

I'd go with something light and bland, since the chicken and jambalaya are hardy and spicy enough and you don't want to overpower that. I'd do grilled veggies (grilled zucchini, eggplant, tomatoes) with a green salad. But then again, if you're looking for wholesome good solid food, then corn bread, as mentioned already, is always tasty.

1 pound smoked pork sausage such as kielbasa
1 large onion
2 small red bell peppers
2 celery ribs
2 teaspoons vegetable oil
1 1/3 cups long-grain white rice
2 2/3 cups chicken broth
1/4 teaspoon cayenne
4 scallions Optional
Salt and freshly ground black pepper

Cut sausage into 1/4-inch-thick slices and chop onion, bell pepper, and celery. In a dry 2 to 2 1/2-quart heavy saucepan brown sausage over moderately high heat, stirring frequently, and with a slotted spoon transfer to paper towels to drain. Pour off any fat from pan and in pan cook vegetables in oil over moderate heat, stirring occasionally, until onion is softened. Stir in rice, broth, and cayenne and bring to a boil. Cover pan and cook rice over low heat 15 minutes.
Remove pan from heat and let rice stand, covered, 5 minutes. Thinly slice scallions. Fluff rice with a fork and stir in sausage, scallions, and salt and pepper, to taste.
