yes it does ..but not a big difference ..i make rice everyday ..i'm asian ..haha ..but when you cook the rice ..let it sit for awhile because if you use it right away the rice is too moist and will stick to your pan when you fry it ..however a few hours is a long time ..if you don't want to wait that long ..probably 15-20 minutes would be ok ..

It is best for the rice to sit for a few hours up to a day. The starches in the rice firm up when the it cools and sits. If you try to boil rice and use it immediately you will be left with a sticky mess.
If you don't have a few hours just spread the rice out on the counter or a tray and let it cool to room temperature. It won't be quite the same as using day old rice but it works in a pinch.

I boil the rice for 6 mins then leave to cool for about 20-30 mins.
I heat the wok up with oil then mix 2 eggs in a bowl with a little milk. I pour 3/4 of the egg mix in the wok and fry, chopping it with the spoon all the time. I then add all the rice and the rest of the egg, keep mixing and add a dash of soy sauce.
Its best to let the rice cool to allow a lot of the moisture to dry up. You could do it straight away but you will get stodgy rice.

Its really easy, my hubby taught me and I'm rubbish in the kitchen but can produce better egg fried rice than the Chinese resturant at 1/4 of the price!

Cook the rice ahead of time so the rice will cool off. The rice will firm up and not become mushy as it would tend to do with "just cooked" rice.
The ideal rice to use is rice from the night before. The refrigeration gelatinizes the rice and decreases the clumping when you make fried rice, but allowing it cool a few hours is better than using hot rice.

My mom is from Thailand, and the way the taught me was to cook it in the rice cooker( or pot, what have you) the spead it out on a cookie sheet to let it cool. Turn it a couple or times with a spatula to speed up the process. Then fry it with your eggs and soy sauce. To make it taste a little better try adding white pepper. Hope this helps.

i'd make the rice ahead of time, mostly a day ahead because if u just made the rice, it will be sticky and mostly kind of watery so i let it sit in the fridge so the water can be soaked in the rice..but hey if you're in a hurry, just cook up some rice and make fried rice with egg

Yes cook the rice first and let it cool off. Actually, day old rice is the best to make egg fried...
I personally add some ham and peas, bit of oyster sauce, yum!

Be careful with rice. Treat it like chicken in that it can harbour really bad bacteria if cooked and left out of the fridge. Use it immediately for safety and don't let it hang around or risk food poisoning.

I think it helps to separate it nicely,some say put a spoon full of cooking oil in while boiling too.Try Tai recipes web sites for lots of ideas on rice cooking.

The rice will be cooked more. Unless you use instant rice then no you do not have to cook.
