I have a couple bags of mixed vegetables in my freezer, and I am getting really sick of just eating them plain. I made a soup with some of them, but need some more ideas on how to use them. I am NOT into cooking, so I need something with just a few common ingredients, nothing elaborate.

How about a pot pie?

Use cream of something soup (chicken, mushroom... whatever you like), the mixed veggies and some pre-made pie crust and bake away. Add some leftover chicken and you're set.

If you don't want to deal with the crust, you can put it all in a casserole dish (veggies, cream soup, plus mix in an 8oz bag of shredded cheddar) and top with crushed potato chips mixed with melted butter (combine 2 cups crushed chips and 1/4 stick butter melted)... Bake 350F for about 30-45 minutes.

This is my favorite soup recipe because the work involved is nearly zip zero. If you buy pre-packaged shredded cabbage (cole slaw package – approximate the weight of a small cabbage), there is no food prep involved at all – none! Just throw everything in the pot and turn on the heat.


Spartan Vegetable Soup

1 small to medium cabbage
2 15 oz cans stewed tomatoes
4 cans water (using tomato can)
2 lb frozen mixed vegetables
½ jar (about 6 cakes) beef bouillon (or chicken or vegetable bouillon)

Discard outer leaves of cabbage. Cut cabbage into quarters; cut out core and discard. Slice cabbage into small strips or shred in food processor. Combine all ingredients in kettle and cook together until done, about 30 minutes.

Despite the fact that the ingredients do not seem like a lot, this makes an enormous quantity of soup! For a standard-size soup kettle such as most households have, cut the recipe in half.

Cheesy Veggies & Noodles
INGREDIENTS
1 (8 ounce) package rigatoni pasta
1 (10 ounce) package frozen mixed vegetables
2 cups cubed processed cheese
1/2 teaspoon soy sauce
1/2 teaspoon garlic salt
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Cook frozen vegetables according to package directions.
In a small saucepan combine processed cheese, soy sauce and garlic salt. Stir over medium heat until cheese is melted.
Combine pasta, vegetables and cheese sauce.



Chicken Jumble
INGREDIENTS
1 tablespoon butter
4 skinless, boneless chicken breasts
1 (16 ounce) package frozen mixed vegetables, thawed
2 (16 ounce) cans Italian-style diced tomatoes, drained
DIRECTIONS
Melt butter or margarine in a large skillet over medium high heat. Add chicken and saute for about 4 to 5 minutes, until lightly browned. Add mixed vegetables and tomatoes, reduce heat to low and simmer for 30 to 40 minutes, or until chicken is cooked through and no longer pink inside.

You could do some type of asian stir fry. Add some type of meat like chicken or beef into oil and mix in the veggies. Season it with soy sauce, salt, sugar, and some pepper. You can look up the exact amounts to add by going to allrecipes.com. Some of these recipes suggest adding cornstarch or some sort of juice, but I never do, and I'm Asian. It's yummy and filling when you eat it with rice.

Brown some ground beef.
After it browns mix in one jar of Spaghetti sauce..let simmer.
When it starts bubbling throw in some Top Ramen noodles and your frozen vegetables..let cook till the veggies are warmed through and the ramen noodles are tender...top with grated cheddar cheese and serve.

takes about 15-20 minutes tops.

get a can of cream of chicken, cube some pre cooked chicken and get a prepbaked pie pan, fill ingredients, then put a pre-pressed pie top and put on top. and bake for 45 minutes of 350. or what about a veggie surprise caserole, mix two cream of mushroom soup with bag of veggies. toss chicken in and sprinkle fried onions on top (frenchs makes a can of them( delicious! enjoy!

Put some in a meatloaf with other spices and add tomato soup and breadcumbs. Trade them with a neighbor or just give to someone.

brown cut up chicken chunks
add 1/2 diluted cream of mushroom , cream of chicken soup
or make a sort of roux with milk, butter, flour
adding frozen veggies
cook until bubbly
thicken as you would a gravy
