Whole wheat pasta with tomato sauce. I can have it together in under 20 minutes. I also steam some frozen veggies on top of the cooking noodles. (I put the noodles in the water then the pot on the stove. I put the water on high so it boils, then turn the burner to medium. I figure part of the cooking for the pasta is it getting wet. The same with brown rice, but the pasta seems to cook faster.)

When I think I'm low on protein and/or calcium, or just think I need an extra boost that day in the nutrient department, I'll cup up some tofu and toss it in the pasta.

I can also do a veggie burger on the electric girll and boil a potato (cooked in the same method as the pasta and rice) and steam some veggies on top in just under a half hour, too.

I eat Lean Cuisine or Weight Watchers frozen entrees. you can also heat up Gorton's fish (not the deep fried kind, the baked kind) and steam in the bag vegetables. make a salad with Tyson's cooked chicken on top. South Beach has lots of good things for sale, too. I don't like to cook for just me, so I buy things that I can just heat up and are easy to fix. they also have all the nutritional information on the package so I don't have to guess.
