If this cook can cook chineese style food, infront of people or alone in a very quick time, present it "nicely" and use traditional method of cooking which could add a bit of authenticity to it?
Could you give me the adverage going rate per hour for a job in the UK please?

This is highly variable, both as regards experience & training etc, but also as regards which part of the country is involved. That said, a Demi Chef de Partie could expect an average salary in the range of £13,000-£18,000, a Junior Sous Chef something like £17,500-£23,500, and a full Sous Chef £20,000-£29,000, depending likewise on the size of restaurant/kitchen that is involved.
I have consciously excluded London and Greater London, which live entirely in a sphere of their own, in all possible respects, which in salary terms means both up and down. :-/

In my experience chefs arent payed by the hour, they work on salary. The place I used to run used to do an average of 250 covers a day the head chef was on £21k and the 2nd chef was on £17k that was doing a minimum of 45 hours per week but some weeks they would end up doing 80+ hours depending on functions or time of year etc. I would imagine that this would be fairly standard anywhere outside london.

I know it's not the UK, but that job in the US would start you out at $15 an hour if not higher depending on experience and quality. And it still wouldn't be salaried, but working over 40 hours a week, it adds up.

It really depends on where you are in UK, how busy the business is & how complex the food is - always bear in mind "If you pay peanuts you get monkeys!!" there are loads of cowboys out there- anyone can put on a long apron & a daft hat & call themselves a chef - if in doubt get them to cook their "signature dish" for you.

Theres no way to tell, it depends on the restaruant, how much experiance they actually have, and a lot of other things.
