I never eat lunch meat that has been opened for more than 3 days. You can always freeze lunchmeat that you don't think you'll be able to eat in time. I buy extra corned beef from the commissary when it goes on sale and freeze it all the time. Just let it thaw in the fridge overnight.

I wouldn't go longer than 5 days. Lunch meat is one thing I have to have fresh!!!! Ham is about the only kind I would eat after that long.

Once opened... about a week, an extra 3 days if I grill the meat first for grilled cheese sandwiches or hot sandwiches.
Unopened... One of the few items where I actually use the sell by date. I'd try to use it within a week after the sell by date.

I think probably a week, but if it doesn't smell good don't eat it!! Lunch meat never lasts around my place, my boyfriend has a big appetite and needs a big lunch!!

Sliced meet should last for 3 days... just remember that when you see it in the cold case at your local deli it might have been from yesterday [especially if you go somewhere like local supermarkets.] try to buy from the butchers if they stock it.
