To shake one's head could be to move it right and left (a gesture meaning "no") or up and down (a gesture meaning "yes").
So "shook my head" is past tense, meaning the head shaking has already taken place...the person may have shook their head meaning yes, or meaning no.

Technically, it's a coating for chicken. Shake N Bake But ... it sounds like a silly phrase, mostly meaningless. Probably like "rock out" or something.

"Shaking your head" is a reaction someone has when they witness something that's disappointingly stupid or just unbelievable. It kind of comes from the reaction of shaking your head to clear away a stun if you've been hit too hard--as if seeing something stupid stunned you just as if you'd been hit.
Shaking your head and scoffing at the same time is basically the same thing as saying "Moron. What's wrong with you?"
