I love Almond cookies.
1 3/4 Cups of all-purpose flour
1 Teaspoon of baking powder
1/2 Teaspoon of baking soda
1/8 Teaspoon of salt
1/2 Cup vegetable shortening
3/4 Cup of sugar
1 Large egg
1 Teaspoon of almond extract
1/2 Teaspoon of vanilla extract
PLUS 1 Large egg, lightly beaten 36 Whole blanched almonds
Directions:
Preheat the oven to 350F. Grease 2 cookie sheets. Combine the flour, baking powder, baking soda and salt in a bowl. Beat the shortening and sugar in mixer bowl until light. Add the egg, beating until light and fluffy. Beat in almond and vanilla extracts. At a low speed, gradually add dry ingredients , beating until blended. Roll the dough into 1 1/4-inch balls. Arrange them 2 inches apart on prepared cookie sheets. Flatten each slightly with the palm of the hand and brush lightly with the beaten egg. Gently press an almond in the center of each cookie. Bake 10 to 12 minutes, until golden brown. Cool on racks.

Just be sure to credit my wife with these cookies. She developed the recipe well over 30 years ago. She was generous and gave the recipe to others. Since then, we've seen the same or similar recipes in cookbooks credited to others. Enjoy the cookies, but give credit where it is due.
Marcia’s Original Cowboy Cookies
2-cup flour
1-teaspoon soda
½ teaspoon baking powder
½ teaspoon salt
1 cup shortening
1-cup granulated sugar
1 cup packed brown sugar
2 eggs
2 cups oats
2 cups chocolate chips
1-teaspoon vanilla
Sift flour, soda, baking powder and salt. Cream shortening and sugars. Mix well. Add eggs. Beat till smooth. Mix in dry ingredients. Drop by teaspoon on greased cookie sheet. Bake 15 minutes at 350 degrees.

Spiced Oatmeal Cookies:
6 oz. All-purpose Shortening
6 oz. Brown Sugar
6 oz. Granulated Sugar
2 Eggs
2 Tbsp Orange Juice Concentrate
7oz. All-purpose Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Salt
1 tsp.Cinnamon,ground
1/2 tsp. Allspice,ground
1/2 tsp. Nutmeg, ground
2 oz. Regular Oats
6 oz.Dark Raisins
6 oz.Golden Raisins
Directions:
1.) Cream the shortening and the sugars until light and fluffy. Add the eggs and orange juice concentrate.
2.)Sift the flour, baking powder, baking soda,salt and spices together and add them to the cream mixture.
3.) Blend in the oats and raisins.
4.) Position dough on to lightly grease cookie sheet and bake at 325 F until almost firm. About 12 minutes.

Peanut Butter Cup cookies
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Sift together the flour, salt and baking soda; set aside.
Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
Shape into 40 balls and place each into an ungreased mini muffin pan.
Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Sour Cream Sugar Cookies
INGREDIENTS
3 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter
3/4 cup white sugar
1 egg
1/4 cup sour cream
1 teaspoon vanilla extract
DIRECTIONS
Sift flour, baking powder, and salt. Cream butter with sugar, beat in egg, then stir in sour cream and vanilla. Stir in flour mixture 1/3 at a time.
Wrap dough in wax paper and chill.
Roll out 1/4 inch thick. Cut out cookies with your favorite cookie cutters. Put on ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 10 minutes.

Orange Cream Cheese Chocolate Chip Cookies
Ingredients:
1/2 cup shortening
3 ounces cream cheese, softened
1/2 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon grated orange rind
1 cup all-purpose flour
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
Steps:
1. Preheat oven to 350 degrees.
2. Combine first 4 ingredients in a large bowl and beat at low speed until smooth and creamy.
3. Add vanilla and orange rind and beat well.
4. Combine flour and salt and add to cream mixture; beating well.
5. Stir in chocolate chips.
6. Drop dough by heaping teaspoonfuls on to cookies sheets and bake for 12-15 minutes, or until edges just begin to brown.
7. Cool on wire racks.

Irresistible Peanut Butter Cookies
Makes 3 dozen
Prep time: 20 minutes
Bake time: 7-8 minutes per sheet
1 -1/4 cups firmly packed light brown sugar
3/4 cup Jif Creamy Peanut Butter
1/2 cup CRISCO all-vegetable shortening or 1/2 CRISCO Stick
3 tablespoons milk
1 tablespoon vanilla extract
1 egg
1-3/4 cups PILLSBURY® Best All-Purpose Flour
3/4 teaspoon baking soda
3/4 teaspoon salt
Preheat oven to 375°F.
In the bowl of an electric mixer combine brown sugar, peanut butter, CRISCO Shortening, milk and vanilla extract; beat at medium speed until well blended.
Add egg. Beat just until blended.
In a medium bowl combine flour, baking soda and salt; add to creamed mixture at low speed. Mix just until blended.
Drop dough by rounded measuring tablespoonfuls 2 inches apart onto ungreased baking sheet. Flatten slightly in a crisscross pattern with tines of fork.
Bake 7 to 8 minutes, or until set and just beginning to brown. Cool 2 minutes on baking sheet; transfer to cooling racks to cool completely.

My friend and co-worker gave me this cookie recipe. Makes cookies in a flash and tastes great. I love how soft they stay.
1 yellow cake mix (or chocolate cake mix)
2 eggs
1/3 cup oil
1/8 cup brown sugar
chocolate chips (add as many as you like)
Mix first 4 ingredients and add chocolate chips (use white chips for chocolate cake mix for a nice contrast). Drop onto lightly greased cookie sheet. Bake at 375 for 10 minutes.

Pistachio Pudding Pancake Cookies
1 1/2 cups pancake mix
1 3 oz pkg instant pistachio pudding mix
1/2 cup cooking oil
2 eggs
1/3 cup pecans (optional)
1 tablespoon cinnamon
1 tablespoon sugar
Preheat oven to 350 degrees F. Combine pancake mix, pudding mix, oil, and eggs until a dough is formed. Mix in the pecans. Shape into balls. Mix cinnamon and sugar in small bowl. Roll each cookie ball in this mixture until well coated. Place on an ungreased cookie sheet and flatten slightly with a fork. Bake for 8-9 minutes until bottoms are golden-brown.

1/2 cup softened butter
1 1/2 cup sugar
1 cup pumpkin
1 egg

1 teaspoon baking powder
1 teaspoon cinnamon

2 1/2 cups flour
1 teaspoon baking soda
Cream butter and sugar in large mixing bowl. Add egg and vanilla. Beat until fluffy. Combine flour, baking soda, baking powder, cinnamon, nutmbeg and salt in a separate bowl. Add to butter mixture alternating with the pumpkin beating after each addition. Drop rounded teaspoon on lightly greased cookie sheet. Smooth tops. Bake at 350 degrees for 15-20 minutes or until lightly browned. Cool.
Cream Cheese Frosting
3 oz cream cheese
1/2 cup butter
1 teaspoon vanilla
2 cups powdered sugar
Combine frosting ingredients in a small mixing bowl. Beat until light and fluffy. Spread on top of cookies.

1/2 cup butter, softened
1 cup sugar
1 egg
1/4 cup milk
1 teaspoon vanilla
1 3/4 cups flour
1/3 cup cocoa
1/2 teaspoon baking soda

16-18 large marshmallows
Beat butter until soft. Add sugar and beat well. Add egg, milk and vanilla. Stir in dry ingredients. Bake at 350 degrees F for 8 minutes. Cut marshmallows in half and press on cookies (cut side down) and bake for 2 minutes. Cool and pour icing on top.
Icing
6 tablespoons butter
1/4 cup milk
2 tablespoons cocoa
1 1/3 cup powdered sugar
1/2 teaspoon vanilla
In saucepan combine butter, milk and cocoa and bring to boil for 1 minute. Stir in powdered sugar and vanilla.

Add cocoa and egg whites, beating well. Gradually add flour mixture; beating until blended. Stir in chocolate chips. Drop by rounded teaspoonfuls on cookie sheet coated with cooking spray. Bake for 10 minutes. Cool on pans for 2 minutes and then remove letting cool completeley on wire racks.
