You made two mistakes. We'll discuss those, and how you can fix them.
1) NEVER buy extended warranty from the dealer, unless it's a factory extended warranty on a factory certified used-car honored at all brand-related dealerships. For example, Ford ESP is honored at all Ford / Lincoln / Mercury dealers. They get a HUGE markup on those (as much as 50%)
2) Financing at a dealer. Unless you're dealing through the credit arm of the manufacturer (EX: Honda Financing) you should NEVER get a loan at a dealer, since they take a tiny cut of every payment (about 0.25% or 0.5%) you make. Exception would be if they have REALLY low special interest rates (and make sure it's for the full term, not just first year). You should have gotten the loan first, THEN walk into the dealership.
Now how do we fix your problem? Look at the extended warranty contract and find THEIR customer support number, and call them up. If the dealer haven't submitted the apperwork yet, you're in luck! Tell them NOT to accept the paperwork, then go back to dealer and yell at them. Otherwise... as you signed the paperwork already, expect to hear "no" a lot, but they MAY let you got after paying a minor penalty. Else, well, keep the car well maintianed and consider it a lesson learned.
As for the financing, you may be able to get it re-financed, but there may be a penalty for early payoff. Make sure the difference is big enough that you would actually SAVE money before going for it.

You said the 7 year warranty and also the extra service plan, are these the same or two different plans?
Most extended warranties can be cancelled with out approval from the dealership, depending of course on what company actually has the warranty. Is it the dealership or an outside source? You need to find out who the warranty is with, you should have copies of the plan and if so there should be a number to contact. Call and see what options are available for cancelling.
Sounds like a classic case of a dealer selling and then simply forgetting about the customer after the sale.
First you should visit the dealer and ask to see the general manager, if that doesn't work then contact your local BBB office and file a complaint.

Always read your finance contract before signing and driving off the lot.
Extended warranties are a waste of money. Call the warranty company and cancel your contract. They will refund the money directly to your finance company. That should take 30 days.
Next, you need to contact the credit reporting agency and verify that there is something on your credit report negatively effecting your score. If there is, protest it and get your report cleared up. That should take 30-60 days.
Then, you need to shop around to find a better rate for your newly corrected and hopefully higher credit score. Try State Farm Bank (contact your local agent) and your local credit union. Those two have probably the best rates out there at the moment.

Call the Attorney Generals office for your state. Advise them of the situation, and file a deceptive trade practice complaint against the dealer. Call your local TV news station and see if they have investigative reporters who will contact the dealer (they hate bad press) and get it worked out for you.
