Many professional cyclists will have three bikes. A road bike, a spare road bike and a time trial bike. There are also a myriad of wheels, parts, bars, etc that get swtiched out around particular events. So basically that means three frames. Higher calibre riders get more frames. They may need one specifically more climibng like Lance had in the Alps. Or perhaps one specially for cobbled classics like Paris Roubaix. So they don't really change out their bikes, they just have several at their disposal.
