I have no doubt that she can find someone in JFK that speaks her language , I mean the UN is in NYC for a reason. I do think that it is very important for you to explain to her in fine detail exactly what is going to happen as far as the whole process is concerned and if you can find out where her gates will be and how to get there it would help her a lot.
JFK at the wrong time of day can be a zoo and even if you know where you're going it can be a trying experience.
If it was my mother , I would get her there three hours prior to boarding and if she has to wait in the boarding area for an hour -great bc it means I did my job and that she successfully navigated the entire process.

Take the NJ Turnpike south to go out 13 in the direction of new york...take the Staten Island Expwy all a thanks to the Verrazano Bridge (about 8 miles)...stay left on the bridge and merge onto the Belt limited-access highway East to go out 17 you'll see loads of airport parking warning signs there.

the first thing to check out is the terminal in jfk that has your mom's airline. jfk is actually composed of several buildings/terminals instead of just one huge structure. once you know which terminal it is, go there well ahead of time (4 hours maybe) so that your mom can get relaxed in the environment with you before she has to go to the passenger-only area. also, i'm sure that if you ask help from the airport personnel, they'll be able to assist your mom go to the gate she needs to go.

Make sure she brings a good map. JFK Airport is a maze. She should call first and ask for exact directions and telephone numbers in case she gets lost.
