If you had a generator supplying electricity to some appliances connected in parallel, would you expect any change in the generator as more appliances are turned on?

The prime mover for the generator is the part that needs to respond the most. If it is a steam turbine it will need more steam to keep the generator turning at the correct speed. If it is water powered it will need the flow through its blades increased.

The only change in the generator would be an increase in the winding temperature as it outputs more power at less than 100% efficiency.

Certainly! The more amps and/or volts you attempt to draw from the generator will cause it to overload, thus not supplying the necessary voltage/amperage to the appliances you are attempting to operate and this can lead to damage in the circuit!
