this weekend,there will be three of us and I would like for it to be like a one dish meal. Not spaghetti or lasagna.

This is the pasta recipe i give all the time. My fav.

Chicken Salad Deluxe

1 ¼ cups prepared buttermilk salad dressing – I make my own from the dry pack.
½ cup mayonnaise
3 tablespoons half and half
1 ¾ teaspoons Beau Monde seasoning
1 teaspoon salt
½ teaspoon pepper
5 whole chicken breasts (about 2 pounds), skinned cooked and cubed – I boil mine in chicken stock
10 oz. shell macaroni, cooked, rinsed, and drained and cooled
3 cups diced celery
2 ½ cups seedless green grapes, cut lengthwise into halves
12 oz slivered almonds, reserve 1 tablespoon for garnish
2 cans (2.25 oz each) sliced water chestnuts
½ cup chopped onion
Lettuce leaves
Cantaloupe slices

Combine salad dressing, mayonnaise, half and half, seasoning, salt and pepper in small bowl; blend will. Cover; refrigerate overnight to blend flavors.

Combine chicken, shells, celery grapes, almonds, water chestnuts and onion in large bowl. Pour dressing over salad; toss gently to coat. Serve on lettuce. Garnish with reserved almonds. Serve with cantaloupe slices.

Makes 20 servings, but my family of 4 eats half the first day and finishes the rest the next. This is my all time favorite pasta dish. What’s nice is you can do the dressing one day and do the rest the next.

How about Enchilada Pie? Here's a good recipe to try:

11/2 lb ground beef
1 yellow onion, diced
1 clove of garlic minced
3 T olive oil
1/3 cup Piquante sauce
1 can Enchilada Sauce
1 can drained pinto beans
1 small can sliced olives
3 cups Fritos corn chips
3 cups shredded Mexican Cheese blend

Heat olive oil in skillet and saute ground beef with onion and garlic. Drain and add picante sauce, enchilada sauce, olives and pinto beans. Simmer for 15 minutes. In baking dish, layer 1/3 of the corn chips, 1/3 of the meat mixture, and 1 cup of the cheese. Repeat layers and top with cheese. Bake for 1 hour at 350 degrees and let cool for 15 minutes before serving. This dish is nice with a green salad and Spicy Ranch Dressing.

Sweetie,why not do a pasta bake or casserole?Here are a couple recipes you may be interested in trying.

Alfredo Fake Bake

1lb penne pasta
1 1/2 cups half and half or heavy cream
2 cups grated parmesan
salt and pepper
1/2 cup shredded mozzarella

Cook pasta til it still has a good bite to it.Place in a casserole or baking dish.Add cream,parmesan,salt and pepper.This would be the time to add extras such as frozen peas or your meat of choice.Place in a 350 degree oven until sauce is thick and bubbly,pasta will finish cooking in the sauce.Remove from heat and top with shredded mozzarella.Place back in oven under "broil" until cheese is melted and desired color.Serve with garlic bread,bread sticks,or a nice side salad.

Easy Vegetable Pot Pie

2 cans of cream of celery soup(you could use cream of mushroom as well)
1 cup frozen peas
1 cup frozen carrots
1 cup thinnly sliced patatoes(they will cook,make sure they are thinnly sliced)
1 1/2 cups half and half,heavy cream,or low fat milk( i find the cream gives it a nice consistancy but milk can be used in a pinch)
1 can grands jumbo biscuits

In a baking dish place condensed soup and cream or milk.Whisk to combine.Toss in peas,carrots,patatoes,and any vegetables you desire.Salt and pepper to taste.Stir to combine vegetables with soup mixture.Top with biscuits,and dab biscuits with butter.Place in a 350 degree oven once biscuits are browned and cooked through the vegetables should be nice and tender.Remember,even after you remove from the heat,it will continue to cook.The patatoes,you want to make sure they are extremely thinnly sliced.This could easily be made into a meat dish,by adding your favorite meats.

k heres 2,

mushrooms
white button mushrooms take stem out and clean

let a cake of cream cheese soften, add minced garlic ( produce dept at store in jar ) cook fresh bacon peel off fat crumble good

add garlic and bacon to cheese to taste

spoon into shrooms
bake 400 until cheese starts to brown

my kids wont touch shrooms but eat these


cheese dip
everyone knows this one

big block velveeta DONT use cheap brand

melt SLOWLY in pot

cook a roll of sausage ( i use jimmy dean )
crumble and drain well

1 can Rotel found on the aisle with the diced tomatoes

you get this in plain spicey hot etc to taste

after cheese is melted add sausage and Rotel (dont drain can add whole can to cheese

serve with chips its great

do have a good marinade for chops or chicken

1 1/2 cups soy (use 1/2 salt type)
1 1/4 water
1/4 cup vinegar

soak meat overnight in fridge
enjoy

works on anything just dont do seafood overnight just a few hours work

When we have get togethers my family always asks for this.
Tater Tot Casserole
1 bag tater tots
2 lbs hamburger
1 large can cream-of-mushroom soup
1 jar chez whiz
1 pack mozzarella cheese
Layer tater tots in glass bake pan bake at 350 while hamburger is cooking drain and add soup and chez whiz
pour over tater tots, top with another layer of tots then return to oven for 20 minutes then sprinkle with the mozzarella and bake another15 minutes

Here's another one it's easy, cheap and very fancy looking
Chicken Bake
3 boneless chicken breast
2 cans mixed veggies
1 large jar chicken gravy
1 large box stove top stuffing
Boil chicken till done cut onto small pieces, mix with veggies and gravy pour into glass bake pan, Make stuffing and spoon on top bake at 350 for 25-30 minutes

CHICKEN PESTO W/ PENNE PASTA

This is a wonderful dish!!

2-3 lbs. of boneless skinless chicken (cut into bitesize pieces)
1 of each: red, yellow & green pepper (cut into strips)
1 red onion (cut into about 1 in. pieces)
1 each: yellow squash & zuccinni (cut into circles or 1/2 circles)
1 pkg. sliced fresh mushrooms
1 lb. penne pasta
1 pkg. Knorr's pesto sauce
1 pkg. Knorr's garlic herb sauce
about 2-3 tablespoons of chopped garlic (in the jar)

saute chicken in garlic and a little butter and black pepper
meanwhile, boil pasta
once chicken is most of the way done, add veggies & saute together. cover to cook evenly, but stir occasionally.
meanwhile, cook both pasta sauces in same pot by directions.
once pasta is drained and chicken and veggies are done, add everything together.

Tuna Taco:
Soft taco shells.
Take canned tuna or chicken and mix it with salad dressing (or mayo) then cut up cheese, tomatoes, and cucumber. Then you put the tuna mix in the soft taco shell and wrap it up and eat it like a taco it is really good and easy!

1/2 pound ground round, cooked wit onion and drained
1 taco packet (cook meat with it according to directions)
1 small onion, minced
1 bag shredded mexican cheese
salsa
jalopenas
1 can refried beans
tortillla chips

Mix everything but the chips and bake for 30 at 350.

Serve with chips, sour cream, guacamole, onions, peppers, olives, anything you want.
