Date Fritters
Ingredients
+ Unos dátiles= some dates (the fruit!)
+ Para la crema de relleno:= for the cream filling:
+ medio litro de leche= 1/2 liter of milk
+ 3 cucharadas soperas de leche fría= 3 tbsp cold milk
+ 3 yemas de huevo= 3 egg yolks
+ 6 cucharadas soperas de azúcar= 6 tbsp sugar
+ 2 cucharadas soperas de maizena= 2 tbsp cornstarch
+ 1 cucharada rasa de harina= 1 tbsp flour
+ una corteza de limón o un pellizco de vainilla = 1 lemon peel or pinch of vanilla
+ Masa para envolver:= dough/batter
+ 300gr de harina= 300 gm of flour
+ 1 pellizco de sal= pinch of salt
+ 2 vasos no llenos de leche= 2 cups milk
+ 3 cucharadas de aceite fino= 3 tbsp fine oil
+ 3 cucharadas soepras de vino blanco= 3 tbsp white wine
+ 1 cucharada sopera de azúcar= 1 tbsp sugar
+ 1 litro de aceite para freír= 1 liter oil for frying
+ un plato con azúcar = plate with sugar
How to prepare:
Prepare the cream in a pan by boiling the 1/2 liter of milk with 3 tbsp of sugar and the lemon peel.
In a bowl, mix the yolks, the rest of the sugar, the cornstarch, the flour and the cold milk. Mix well so it won´t be lumpy.
When the milk begins to boil, pour a little bit (slowly) into the bowl, carefully so the yolks won´t curdle and form lumps.
After it has dissolved with a little bit of hot milk, pour this into the pan of milk and continue stirring with a wooden spoon, allow it to simmer (low heat) for about 5 minutes. Remove, then pour into a large bowl and allow to cool.
Prepare the dough/batter by putting the flour and mixed salts in a bowl; in the center, add the wine, oil and sugar and mix together with a wooden spoon, then adding the cold milk.
Allow this mixture to stand for at least 30 minutes.
Remove the seed from the dates (the fruit!) and fill with the cream. In the meantime, heat the milk. Place the dates in the dough/batter and begin to fry in groups. Remove as soon as they turn golden. Drain the oil from them and sprinkle with confectioner`s sugar. Serve right away.

I´ll try to make it easier....
A/ 1liter of milk with 3 spoonfuls of sugar and the rind of a lemon.
(these boiling in a saucepan)
Mix in a bowl 3 yolks, 3 spoonfuls more of sugar, 2 spoonfuls of maizena, 1 spoonful of flour and 2 glasses of cold milk. (mix all these trying not to have lumps)
B/ When the milk.... you have in the Saucepan starts boiling... pour a little on the bowl very very slowly not to get any lump. Mix with a wood spoon. Now take the bowl and pour it in the saucepan, mix slowly with the wood spoon and let it cook for five minutes on a low heat.
C/ Pour all that "pastry" on a platter and let it cool down.
D/ Put in a "salad bowl "300gr. of flour, a pinch of salt, / with 3 spoonfuls of white winw in the middle of the flour/ 3 spoonful of oil and 1 spoonful of sugar, Stir with the wood spoonful. And pour now cold milk, allow to stand for 30 minutes.
E/ Remove the stone from the "dates" and stuff them with the "pastry".
F/ Heat the milk you have in the "salad bowl". Put the "dates" into it, and wrapped the "dates" with it.
G/ Fry the "wrapped dates" in a frying pan with oil and take them out when they get brown. Drain all of them good from the oil. Sprinkle some icing sugar and.......Serve immediately!!
