This ia a family favorite.
Broccoli Stuffed Cornish Hens
10oz pkg frozen broccoli, cooked and drained well
2T. butter 1/4 tsp salt
1c. cooked long grain rice (I use Success Rice)
Dash of pepper
1/2 c. shredded mild cheddar cheese (you may use shredded swiss cheese, or even cheese whiz)
* I prefer Cheez Whiz
4 cornish hens- rinsed and patted dry with paper towels.
Combine broccoli, rice, cheese, butter, salt and pepper.
Lightly salt cavities. Stuff birds with broccoli mixture.
Rub outside with shortening, and place in baking pan.
Bake at 350 degree for an hour and 15 minutes.

here's one for a nice spring day...
broccoli and cream cheese tart:
preheat oven to 375
precook a piecrust (9") for 10 minutes then take out of oven
bring medium saucepan thats half full of water to a boil
add 4 cups broccoli chopped into flowerets. and bring back to a boil. cook 3-4 minutes-then drain, pat dry.
spread broccoli over cooked pie crust.
then....in a bowl, take an 8 ounce pkg cream cheese that comes flavored with garlic and herbs and beat it until smooth. then beat in 1/2 cup half and half, 2 eggs and 1 egg yolk. season with salt and pepper.
stir in 4 finely chopped green onions and 2 tbsp chopped parsley.
pour mixture over broccoli and sprinkle top with some parmesan cheese
bake about 35 minutes until "set", serve warm. serves 6 people.
great with a simple salad....

Chicken Teryaki Stir Fry
Sliced chicken breast, vegetables of your choice cooked up in a frying pan on the stove. add in the teryaki while you're cooking. If you want some carbs in the meal, cook up some noodles in a separate pot and then add them into the stir fry at the end to give them a crisp flavor.

Zippy Chicken coleslaw
INGREDIENTS
1 tablespoon paprika
1/2 teaspoon dried thyme
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/2 pound skinless, boneless chicken breast halves
1 (3 ounce) package ramen noodle pasta with flavor packet
4 cups shredded cabbage
2 cups broccoli coleslaw mix
3 green onions, chopped
2 tablespoons sesame seeds, toasted
2 tablespoons sliced almonds, toasted
DRESSING:
3 tablespoons sugar
2 tablespoons reduced-sodium soy sauce
4 1/2 teaspoons cider vinegar
2 1/4 teaspoons water
2 1/4 teaspoons canola oil
1/8 teaspoon pepper
DIRECTIONS
In a small bowl, combine the first eight ingredients; rub over both sides of chicken. Broil 3-4 in. from the heat for 5-6 minutes on each side or until juices run clear. When chicken is cool enough to handle, shred with two forks; cool completely.
Set aside seasoning packet from ramen noodles. Break noodles into small pieces; place in a large bowl. Add the cabbage, broccoli coleslaw, onions, sesame seeds, almonds and chicken. In a jar with a tight-fitting lid, combine the dressing ingredients. Add the contents of seasoning packet; shake well. Pour over coleslaw and toss to coat.

rub a large whole chicken down with olive oil
season with plenty of sea salt and pepper. inside too.
put aluminum foil on cookie sheet
have a can of beer and drink or pour half into a glass
set the can on the cookie sheet and set the chicken on the can, the can inserted in the chickens butt. it will sit up without support. cook at 350 for an hour. you'll love it.
Hamburger Gravy
INGREDIENTS
• 2 pounds lean ground beef
• 1/4 cup all-purpose flour
• 1 quart milk
• salt and pepper to taste
• 1 teaspoon onion salt
• 1 small onion, chopped (optional)
DIRECTIONS
1. Place hamburger in a large, deep skillet. Crumble and cook over medium high heat until evenly brown. Remove from heat and sprinkle flour over cooked hamburger. Stir until evenly coated and all fat is absorbed.
2. Place skillet over medium heat, add 1/2 of milk and stir until gravy begins to thicken. Add remaining milk until desired consistency has been reached and gravy comes to a boil. Season with salt, pepper and onion salt.
3. Serve over mashed or boiled potatoes, toast or biscuits. Add fresh chopped onion if desired.
Hawaiian Sweet-And-Sour Meatballs
Recipe Serves: 4
Recipes Ingredients:
1 1/2 lb Ground beef
1/4 ts Pepper
1/4 ts Nutmeg
2 ea Green peppers,bite size
1 ts Salt
1/4 ts Garlic powder or minced garl
2 tb Salad oil
4 tb Cornstarch
1/2 c Brown sugar
1 1/4 c Pineapple juice
2 c Fresh pineapple chunks
1 tb Soy sauce
2 ea Eggs
1/3 c Water
1 ea Onion, minced
3 tb Vinegar
Recipe Instructions:
Blend together beef, eggs, 1 t cornstarch, onion, pepper, nutmeg, salt, and garlic. Form into 1-inch balls. Heat oil in skillet; brown meatballs on all sides. In large Saucepan add remaining cornstarch, soy sauce, vinegar, water, and brown Sugar to pineapple juice. Cook until thickened; stir constantly. Add meatballs, fruit, and peppers. Cook 5 minutes or until Fruit is well heated. Yield 4 to 6 servings
PORCUPINE MEATBALLS
1/2 c. uncooked rice
1/2 lb. ground beef
1/2 tsp. pepper
1 sm. onion, finely chopped
1 tbsp. cooking oil
4 c. canned tomatoes
Mix rice with ground beef, pepper and onion. Shape into balls the size of walnuts.
Pour cooking oil into a large pan with a lid. Add meatballs and brown on all sides.
Mash tomatoes with fork and add to the meatballs.
Cover the pan and cook slowly about 30 minutes or until the rice is tender and the meatballs are doubled. Meatballs will look like porcupines with bristles sticking out.
Cabbage Poppy Seed
3 c. uncooked noodles
1/4 c. butter
3 c. shredded cabbage
3 chopped green onions with tops
2 c. chopped, cooked chicken
1 tsp. poppy seeds
1/4 tsp. salt
Dash pepper
1/2 c. sour cream
Cook noodles until tender and keep warm. Steam cabbage until hot (crisp). Saute onions in butter. Stir in noodles, poppy seeds and seasonings, cabbage, sour cream and chicken. Stir to coat and serve.

This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce and lime juice.
Ingredients
3 tablespoons Soy sauce
1 tablespoon Honey
1 tablespoon Vegetable oil
1 teaspoon Lime juice
1 teaspoon Chopped garlic
4 Skinless, boneless chicken breast halves
Preparation
In a shallow medium dish, blend soy sauce, honey, vegetable oil, lime juice and garlic. Place chicken breast halves into the mixture.Marinate in the refrigerator at least 30 minutes.Preheat an outdoor grill for high heat and lightly oil grate. Place marinated chicken on the prepared grill. Cook 6 to 8 minutes on each side, until meat is no longer pink and juices run clear.
