I happen to love fried zucchini I had some saturday it goes good with ranch dressing this following recipe I hope you enjoy .. take care

6 servings 1 large zucchini 10 min 5 min prep
Change to: large zucchini US Metric
3/4 cup cornstarch
1/4 cup all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 cup water
1 egg
In medium mixing bowl mix all the above until smooth. Dip sliced zucchini in batter and fry in 1/3 inch hot oil till golden brown.
This recipe usually will cover 12-15" long zucchini cut in 1/3" slices.

The best fried zuchinni I've ever had has had a mixture of cornmeal and bread crumbs on the coating. Here's an idea:
2 eggs
1/2 cup milk
1 tsp hot sauce
1 tsp salt
1/2 tsp pepper
1/2 cup flour
1/2 cup cornmeal
1/2 cup Italian bread crumbs
Wash and dry zuchinni thoroughly. Blend flour, cornmeal and bread crumbs with salt and pepper. In bowl, mix eggs, milk, and hot sauce. Dip zuchinni first in egg mixture and then in flour mixture. Repeat. Place in skillet heated with olive oil and fry until golden. Serve with ranch dressing.

For a slightly different twist, try dipping it in an egg/water or egg/milk mixture, then in corn meal. Season with seasoned salt & pepper.

I like to slice it thin.then soak in aome milk.batter in cornmeal & fry in butter...YUMMY.the butter will burn & they will get dark,maybe add a little veg oil to the butter to keep it from burning.or you could just drain it every couple of batches to keep them from looking burnt..It will kinda taste like zucchini,popcorn,cornbread,,,really good if someone doesnt care to much for a squashy taste.works great for yellow squash,too.

Try with cornmeal, also. We use a "Drakes Fry Mix" or any batter mix might work.
