What are the Glycemic Index and Glycemic Load of one serving of Hominy and/or Corn Grits. This is my favorite breakfast food, and would like to know if I could integrate it into my weight management plan.

I usually use the Quaker Instant brand, and haven't seen Grits in any of the list online.

Well, I am originally from Mississippi, and this is probably heresy to my fellow Mississippians but to me the question should be what does grits go well with? My answer? Nothing. The closest I could come to eating grits was oatmeal or cream of wheat. To me eating grits is like trying to eat sand. Sorry, I'm one southerner by birth that can't stand the things. I don't like okra or liver either. But I love fried chicken and watermelon.

A grilled, open faced biscuit, an over medium egg and honey! Bonaparte! I've had fish n grits too! I make croquettes with tuna, mackerel or salmon and cooked grits with an egg and some grated onions mixed together. Then I roll it in corn-meal and fry it light crisp on both sides! Delicious with biscuits! Oops, I just gave you my mother's secret recipe. She use to make that for us every Friday night with home-made bread. Those were the days!
