I make a plain rice, with salt, pepper, 1 tsp lemon juice, 1/2 tsp of the lemon zest. When rice is tender I add chopped fresh parsley and a tablespoon of butter (or a drizzle of olive oil). I usually serve with fish because I get stuck on sides for fish, too. I usually just use veggies like sauteed sliced zuchini and summer squash and slivered carrots, they go really good with the lemon flavor of the rice, and look good beside it. I also sprinkle the veg with chopped parsley, too. I love mahi mahi, it's mild and picks up whatever flavoring you use very nicely.

I have 2 teenage girls....when it comes to fish I try to serve it twice a week. Mahi Mahi is my oldests favorite (she's a picky fish eater).....I just treat it like anything else. I always serve a vegi, then add a fruit and then of course a starch....could be sliced warmed bread, garlic bread, potatoes, rice, etc......I'm also know for making 2 (YES TWO) vegi's........my kids don't leave the table until they have at least tasted them both...............works everytime!

Mahi mahi is a mild white fish so your choice of rice w/ steamed veg should be great - making me hungry - I love mahi mahi.

Instead of red wine, try adding white wine to your lemon mixture. For side dishes here are some of my favorites:
1. Rice pilaf
2. Sauteed spinach with garlic and lemon
3. Fresh green beans
4. Baby red potatoes with a lemon parsley butter
5. Baby peas and pearl onions
6. Risotto

Rice Pilaf would be great with that dish
fresh chopped onions,fresh chopped green and Red peppers,with some chopped mushrooms sauteed in a little butter and add to your rice don't forget the chicken broth or base to add for extra flavor put in any pot with rice topp it off with just enough water or broth if you put your finger in the pot just touching the rice and fill the pot with your chicken broth untill the broth touches your second nuckle then cover and bake or simmer the rice will be perfect everytime

I would go with some sort of cheesy starch, like a pasta or potato dish. maybe garlic mashed potatoes. I like red potatoes, too, with butter and herbs.
Have you considered Asparagus?
