I don't see why not. Everyone has their own take on bolognese sauce - you could make it your signature ingredient! Plus the spinach will make a great nutritional contribution, adding vitamins B2, B9, C, E and A, along with extra fibre content (always good as it's usually difficult to eat the recommended fibre amount every day).
And of course, it tastes yummy, which is as good a reason as any. Go for it!

I put spinach in a lot of my soups and sauces, so I think the texture is just fine. However, the classic recipe doesn't call for it.

Its certainly not traditional but why not. Why not serve it over pasta verde (green pasta made with spinach).
Spinach goes well as an ingredient in any curry or why not serve it gently stir fried with chopped onion and a little grated nutmeg.

Sure you can, and it will be delicious. But then it wouldn't technically be bolognese anymore, it would be more like
"ragu di spinaci alla (in the style of) bologne", or whatever name you want to give it.
