I have a great one! Amish Meatloaf, it stays moist and I get all kinds of compliments!
1 1/2 lbs ground chuck
4 eggs
1 medium onion chopped
1 cup oatmeal (quick oats)
Topping:
1/4 cup ketchup
1tsp mustard
1TBS brown sugar
Beat Eggs, add onion, oatmeal and burger. Mix by hand. I use a 1/2 cup measuring cup, fill with raw meatloaf, take out of measuring cup (careful to keep it packed tight) then place each one on in an aluminum foil lined baking dish. This way each meatloaf is the same size, cooks quicker and easy to pack for lunches the next day.
Mix the ingredients for the sauce and spoon over each meatloaf (before baking).
Bake in a preheated over at 350 degrees for about 40 minutes. If you use a loaf pan and not individual loaves, baking time is about 1hr to 1hr ten minutes.

Brown Sugar Meatloaf
INGREDIENTS
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
Bake in preheated oven for 1 hour or until juices are clear.

1 15 oz can of diced tomatoes
2 packages Liptons Herb and Garlic soup mix
2 eggs
1/2 cup Italian Bread Crumbs
1 tsp salt
1/2 tsp fresh ground pepper
1 T Worcestershire sauce
1 T yellow Mustard
3 T brown sugar
Saute bacon and dice. Add tomatoes and simmer until reduced. Set aside. Mix beef with eggs, soup mix, salt, pepper, worcestershire sauce, and bread crumbs. Add half of the tomato mixture and mix well. Form into a loaf in baking dish. To tomato mixture, add brown sugar and mustard. Blend well and bring to a boil for 1 minute. Spoon over the top of the meatloaf and cover with foil. Bake for 1 hour at 350 degrees. Serve with mac and cheese or mashed potatoes. Yum!

Mashed Potato-Stuffed Meat Loaf Casserole
Potato Filling:
2 pounds russet baking potatoes (4 large)
Salt
1/2 cup sour cream
1 tablespoon unsalted butter
1/8 teaspoon freshly ground black pepper
1 large egg
1/4 cup chopped fresh basil or parsley
Meat Loaf Shell:
1 tablespoon olive oil
2 onions, chopped
1 large garlic clove, minced
1 teaspoon dried oregano, crumbled
1/2 teaspoon dried basil, crumbled
1 pound meat loaf mixture (a combination of equal parts ground beef, pork and veal)
2 large eggs
1/2 cup plain dry bread crumbs
1/2 cup canned crushed tomatoes or tomato sauce
1/4 cup chopped fresh basil or parsley
1/4 cup dry white wine
1 tablespoon cider vinegar or fresh lemon juice
1 teaspoon salt
1/2 teaspoon salt
1/2 teaspoon black pepper
Preheat oven to 350*F (180*C). Lightly oil an 8 to 9-inch square pan or a shallow 2-quart casserole.
To make the potato filling: peel the potatoes cut them into 1-inch chunks and drop them into a large pot of water. Add a big pinch of salt and bring to a boil over moderately high heat. Partially cover and boil until tender, 15 to 20 minutes.
Drain the potatoes and return them to the pot. Shake the pan for 30 seconds over moderate heat to dry. Remove from the heat; add the sour cream, butter, salt and pepper and beat with a hand-held mixer until mashed. Add the egg and beat until fluffy. Beat in the basil.
To prepare meat loaf: spoon the olive oil into a medium skillet over moderate heat. Add the onions and sauté to soften, 3 to 5 minutes, if dry add 1 to 2 tablespoons water and cook a minute longer. Add the garlic, oregano, and dried basil, cook 1 to 2 minutes longer. Turn into a large bowl and let cool about 10 minutes.
Crumble in the meat. Add the eggs, bread crumbs, crushed tomatoes, fresh basil, wine, vinegar, salt, celery seeds and pepper. Mix thoroughly with your hands or a big spoon. Turn into the oiled pan and press over the bottom and up the sides of the pan to make a shell 1/2 to 3/4-inch thick.
Fill the center with the mashed potato filling; dot with butter if desired.
Bake 50 to 60 minutes or until the potato puffs up and turns golden brown. Let stand for at least 15 minutes before serving.
Serves 4 to 6.
