I have quite a few over-ripe bananas that I want to use up and I absolutely love banana nut bread. Anyone with a delicious recipe, please share! Thanks.

Here is my personal favorite


Preheat oven to 350. makes 1 regular loaf or a couple mini pans
1/3 c shortening
1/2 c sugar
2eggs
1 3/4 c flour
2 tsp baking powder
1/4 tsp soda
1/4 tsp salt
1 c mashed bananas (abt 2 large overripe ones)
1Tb vanilla
1/2 c chopped nuts..walnuts, pecans - your favorite
1 c choc chips mini or regular semi sweet chips
Cream shortening, sugar, egg. Put dry ingredients in a bowl and sift together. Add dry ingredients to creamed mixture alternating with the mashed bananas. Stir in choco chips and nuts at the very last.
Grease your bread loaf pan or two mini pans. Pour in and bake abt 30-45 minutes. Let cool in pan 5 minutes or so and then turn out onto a rack. Enjoy.
I started making this with chocolate chips and now my spoiled husband doesn't want it any other way! YUM. (you could spread cream cheese frosting atop of loaf when cooled) (sliced and toasted, in toaster OVEN smothered in butter is also a treat!)

This recipe is quite easy to double, triple or even quadruple...which I have done many times. Enjoy!

I bring this to potlucks and it gets demolished.

2 1/2 cups flour (whatever kind you prefer)
1/2-1 cup sugar (calls for 1, but I find less is good if the bananas are super sweet)
1/4 cup canola or olive oil
2 cups mashed banana
3/4 cup silken tofu (the kind in the box)
1/2 t baking powder
1/2 t baking soda
1/4 cup walnuts or pecans
1 t vanilla
1 1/2 t cinnamon
1/4 t nutmeg
1/4 t ground ginger

Cream tofu, sugar, oil, and half of the mashed banana. Stir in remaining banana and vanilla.
Sift dry ingredients together. Combine with wet mixture. Fold in nuts.
Pour into greased loaf pan and bake at 350 F for 40-55 minutes.

this isn't really banana nut bread but these muffins are to die for! you could probably add nuts if you wanted to.

Banana Crumb Muffins
INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

I use a standard recipe (say, from Joy of Cooking) and add the following: 1 T vanilla extract, the zest of a lemon and 2/3 cup raisins. It is wonderful! Especially toasted with honey.

Whatever recipe you use but a cup of vanilla pudding in it to help moisten it.
