It's easier to do it in a large frying pan. Turn the heat to about medium and let it warm up, make your quesadilla and toss it on there. Don't let the wrap burn though, not too good that way. Ya may want to spray some cooking oil down as well, just to be sure it won't stick.

You can butter the bottom of a fry pan, put the ingredients sort of in the middle and let it all warm up, then after just a few minutes, flip it so it's like a pocket, and the melted cheese seals the quesadilla together, and then just let it warm up and melt together. It should only take about 10 minutes total. It's possible to just plop them all together and put them in the oven for about 15 minutes on 350. This is healthier because you don't need as much butter.

Chicken Quesadilla 8 flour tortillas 1 large ripe tomato 1/2 onion spreadable butter 1 lb mozzarella-cheddar blend cheese, shredded 1/2 package old el paso fajita seasoning mix 1/4 cup water 2-3 boneless skinless chicken breasts, diced pace cilantro salsa, to taste Fry chicken in a pan coated with cooking spray or olive oil. After chicken is cooked, add water and seasoning to the pan. Sauce will thicken slightly after a few minutes. Set the chicken and sauce aside while preparing the other ingredients. Butter one side of all the tortillas and set aside. Dice the tomato and the onion, mix and also set aside. Place a tortilla, buttered side down, on hot pan or griddle. Layer ingredient in the following order on the tortilla: cheese, chicken and sauce, tomato/onion mixture, cheese, salsa. Top with another tortilla, buttered side up. Once the cheese starts to bubble from the sides of the quesadilla it typically is time to flip it. Be careful to keep everything together while flipping. I used a spatula underneath (in one hand) and some tongs to hold the quesadilla together (in the other hand) and flipped quickly. Shell should be crunchy and a golden color. If you find that the quesadilla is semi plump in the center, simply press down with spatula once you have flipped it. Let stand for a few moments and then cut into quarters, serve with your choice of sour cream, guacamole or salsa for dipping

Personally I prefer to grill quesadillas when I make them. Makes the tortilla wraps nice and crispy so you eat them easily. You won't end up with a soggy bottom like in a microwave and it's certainly healthier than frying them in butter or oil!
Quesadillas are an ace choice - I made some Quorn ones for a veggie colleague of mine and had to tell everone at work to make them! Damn good food!

Use a sautee pan big enough for your wrap...on a medium heat. Lay out your wrap in the pan, add chicken, cheese, salsa, tomatoes, rice, whatever left overs you may have, to one side of the wrap. Flip other side over to cover. Heat until golden brown on the underside, then flip over in the pan...heat until golden brown. Voila! You have a quesadilla!
Good luck!

Toss a tortilla (or wrap) in a med-hot skillet. When it feels warm, turn it over in the skillet. Sprinkle cheese on half of the tortilla, then chopped or shredded chicken, then more cheese. Then flip over the other half of the tortilla on top of the filling. Press down w/ spatula, then flip the whole thing over. Press a bit, then remove and cut into triangles.

Saute sliced onions and green pepper strips until they are soft. Add chicken and heat through. Serve in heated wraps with cheese, salsa and sour cream.
