i like the opening Surah of the Holy Quraan it is the Al Fatiha:
1 In the name of Allah, the Beneficent, the Merciful.
2 Praise be to Allah, Lord of the Worlds,
3 The Beneficent, the Merciful.
4 Master of the Day of Judgment,
5 Thee (alone) we worship; Thee (alone) we ask for help.
6 Show us the straight path,
7 The path of those whom Thou hast favoured; Not the (path) of those who earn Thine anger nor of those who go astray.
i also like Surah Al Ikhlaas -112
1. Say: He is Allah, the One!
2 Allah, the eternally Besought of all!
3 He begetteth not nor was begotten.
4 And there is none comparable unto Him.

24:35 Allah is the Light of the heavens and the earth. The Parable of His Light is as if there were a Niche and within it a Lamp: the Lamp enclosed in Glass: the glass as it were a brilliant star: Lit from a blessed Tree, an Olive, neither of the east nor of the west, whose oil is well-nigh luminous, though fire scarce touched it: Light upon Light! Allah doth guide whom He will to His Light: Allah doth set forth Parables for men: and Allah doth know all things.
i love this verse all of the verses are beautiful but this one just jumps out at me especially when recited in arabic though i'm sure it sounds beautiful in any language.

All of God's words penetrate the heart, but since you asked for one verse, this one sums up how God is merciful towards our sins:
Al-Nahil
In the name of Allah, the Beneficent, the Merciful.
[16:61]
If Allah were to take mankind to task for their wrong-doing, he would not leave hereon a living creature, but He reprieveth them to an appointed term, and when their term cometh they cannot put (it) off an hour nor (yet) advance (it).

God has sent down the best statement, a Book (this Qur'ân), its parts resembling each other in goodness and truth, oft-repeated. The skins of those who fear their Lord shiver from it (when they recite it or hear it). Then their skin and their heart soften to the remembrance of God . That is the guidance of Allâh. He Guides therewith whom He pleases and whomever God sends astray, for him there is no guide. (Az-Zumar 39:23)
Say: "O 'Ibâdî (My slaves) who have transgressed against themselves (by committing evil deeds and sins)! Despair not of the Mercy of Allâh, verily Allâh forgives all sins. Truly, He is Oft-Forgiving, Most Merciful. (Az-Zumar 39:53)
Just try one time to read about Islam you will not lose any thing

This one is one of my favorites, it is at my desk at work:
And whoever is careful of (his duty to) Allah,
He will make for him an outlet, and give him
sustenance from whence he thinks not; and
whoever trusts in Allah, He is sufficient for
him; surely Allah attains His purpose; Allah
indeed has appointed a measure for everything.
(At-Talaq 65:2-3)
This makes me feel that no matter what happens in my life, there will always be an answer!!!
