Because it is a great contraction for "you all".

...and it's not just us Texans... I've heard it all over the south.

It's no more than saying all of you.

It's short for saying, all of you.

Do "Y" all know what I mean?

or,

Do all of you know what I mean?

It's part of the Texan accent.

There are Western, Brooklyn, New Jersey and Southern accents throughout the US.

I probably missed a few.

I love to hear these different accents.

I also love to hear the accents of those from other Countries.

it's not intentional, its more of their accent, which is more southern,
