First of all, they never sacrificed people. They sacrificed lambs, rams and some times oxen.
Second, it's in the NT about this. Jesus was the ultimate sacrifice. God send His Son for the final sacrifice for His people. All of their sacrifices were in good but they still sinned and for generations their children strayed away and such. So God gave us the one and final sacrifice for us. Jesus' death. After that, we no longer had to sacrifice the blood of animals. We still have to have faith and do good deeds. Remember the veil tearing at the time Jesus dying? This stopped the sacrificing. The Jews at that time knew what that meant, so they didn't sacrifice animals anymore, yet they still are waiting for the Messiah.

Christians per se did not sacrifice people/animals to God, I think the pagans did that.
The nation Israel was told by God to do animal sacrifices as an atonement for the sins of Israel, because without the shedding of innocent blood, there can be no remission of sin. In the garden of Eden, the first blood sacrifice done by God personally was when He killed an innocent animal to cover Adam and Eve's nakedness. This was a precursor to the sacrifice of Jesus on the cross for the sins of mankind that was soon to come.
We believe that Jesus was the sacrificial or Passover Lamb for all mankind to settle the sin debt once and for all, therefore the temporary blood sacrifices were not necessary anymore.

The reason why animal sacrifices stopped was because Jesus Christ was the ultimate sacrifice.
The Old Testament sacrifices pointed to the coming Messiah who would fulfill this role as the perfect substitute for sin.

To my knowledge no human sacrifices were actually made to God by Jews, Christians, or Muslims. Animals however are a different story, guess most PETA members are atheist?

Jesus paid the penalty and was an atonement sacrifice once for all and sat down at the right hand of God, symbolizing that all such work is finished. Read Hebrews around chapters 7-10.

Christians NEVER sacrificed anything to God, that was the Jewish/Hebrews that did the sacrificing of animals to God. They no longer do this because they have no Temple. Jesus Christ was the last sacrifice. There were no Christians until after the Crucifixion and Resurrection. Before there were only Hebrews and Gentiles

Under the New Covenant, Jesus is our sacrifice.
No further sacrifice is appropriate.
And even under the Old Testament, God said he preferred obedience to sacrifice.
(Obedience to God would have eliminated any need for sacrifice.)

The first guy to answer this. Jesus came as the ultimate sacrifice so we don't need to do that anymore. Our sins are paid for, we no longer have to do it through animal sacrifice, hallelujah!!!
