Frozen Fruit Cups
A fabulous summer treat! Cool off with these healthy cups of frozen fruit. The fruity tastes of summer in a cup!
Preparation time: 10 minutes plus freezing
Total time: 1-3 hours
Serving size: Makes 16 servings.
Ingredients
3 cups chopped SCHWAN'S® Golden Fruit Blend (#743), slightly thawed
2 1/2 cups (24 ounce jar) applesauce
2 cups SCHWAN'S® Vanilla Frozen Yogurt (#383), softened
1 carton SCHWAN'S® Frozen Orange Juice Concentrate (#720), thawed
12 (4 ounce) disposable cups
Steps
1. Mix Golden Fruit Blend, applesauce, softened yogurt and thawed orange juice concentrate.
2. Fill 4 ounce cups and freeze.
3. 1 (3 ounce) prepared fruit cup provides 1/2 cup fruit credit.
Tips
For added variety, use flavored or colored applesauce.

STRAWBERRY AND MIXED FRUIT COBBLER
1 pkg. (16 oz.) frozen mixed fruit
1 pkg. (10 oz.) frozen sweetened strawberries
2 tbsp. all purpose flour
1/4 tsp. ground cinnamon
2 tbsp. butter
1/2 c. almonds, sliced
2 tbsp. sugar
1/8 tsp. ground cinnamon
2 tbsp. butter
1 c. buttermilk baking mix
1/4 c. half & half or milk
Remove fruit and strawberries from packaging and place in medium mixing bowl. Microwave at high for 4 to 6 minutes or until fruit can be broken apart. Let stand 5 to 10 minutes. Drain juices into 1-1/2 quart casserole. Set fruit aside. Blend flour and 1/4 teaspoon cinnamon into fruit juices. Microwave at high for 3 to 4 minutes or until mixture thickens, stirring 1 or 2 times. Stir in reserved fruit. Set aside. Place 2 tablespoons butter in shallow bowl. Microwave on high for 45 to 60 seconds or until butter melts. Stir in almonds. Microwave on high for 1 to 2 minutes or until almonds are lightly brown. Stir in sugar and 1/8 teaspoon cinnamon. Set aside. Place 2 tablespoons butter in small mixing bowl. Microwave at high 45 to 60 seconds or until butter melts. Add baking mix and 1/4 cup half & half. Mix well. Drop by heaping tablespoons onto fruit mixture. Sprinkle with almond mixture. Microwave at high for 5 to 6 minutes or until dumplings spring back when touched slightly. Rotate dish 2 times. Serve warm with half & half. Yield 6 to 8 servings. Recipe can be doubled using additional packages of frozen peaches and 13 x 9 x 22 inch glass dish

Fruit Kebabs with Pomegranate Juice Recipe
INGREDIENTS
Juice of 1/2 lemon
2 tablespoons unsweetened pomegranate juice
1 banana, thickly sliced
6 strawberries
6 pineapple chunks
1. Preheat the oven to 350F. Combine the lemon juice and pomegranate juice in a bowl large enough to hold the fruit. Add the banana, strawberries, and pineapple and coat well with the mixture.
2. Thread the fruit onto skewers, set the skewers on a nonstick baking pan, and bake for 7 to 8 minutes, until the fruit is bubbly.
Serves 2.

Want something different for dessert or to bring to a
party. This recipe is great and flavorful. Although
this recipe calls for pineapple and blueberry, you can
use any type of fruit you like. Enjoy!
Ingredients:
3 cups flour
1 cup butter
1 tsp. baking soda
2 tsp. cream of tartar
2 eggs
1 tsp. vanilla
1 cup sugar
24 oz. whipped topping
16 oz. cream cheese
2 cans blueberry pie filling
1 can pineapple chunks
Preparation:
Mix flour, soda, and tartar together.
Cut butter into mixture.
In separate bowl, mix sugar, eggs, and vanilla and
beat well.
Mix all together.
Chill for about 15 minutes.
Roll out the dough on a cookie sheet in the shape of
pizza crust.
Bake at 350 degrees for 8 to 10 minutes.
Now mix cream cheese and cool whip together, and after
the cookie crust cools completely, spread on top.
Put the blueberry pie filling and pineapple chunks on
top of the Cool Whip and cream cheese mixture.
Keep refrigerated.

Fruit and More Fruit Smoothie:
4 cups
1 cup orange juice
1 (10 ounce) package frozen sweetened raspberries, partially thawed
1 cup frozen unsweetened strawberries
1 medium ripe banana, cut into chunks
6 ice cubes
1-2 tablespoon sugar
1. In an electric blender container, combine all the ingredients.
2. Cover and blend until smooth.
3. Pour into chilled glasses.

Dump it in a bowl with some low-fat Poppy seed dressing, a couple of almonds and few mini marshmellows (more for looks then anything else), and enjoy a cool-looking fruit salad!
