I have mince in the fridge and a few hours to come up with something to cook for dinner tonite..

Any ideas? (pls no meatball or meatloaf recipes coz my kids are sick of them..hehehe)

You can use it as seasoning -- for example, fry it up with onions and peppers, and stick it in:

spaghetti sauce and pasta, cover with cheese and bake it
macaroni and cheese, serve with buttered toast
taco shells with lettuce, cheese and salsa
flour tortillas with beans, lettuce cheese and salsa

(If you hate cheese, I'm sorry!)

Mix it up with tofu blocks and seasonings for Mapo Tofu (also spelled Mabo Tofu).
Mix it up with lots of thinly sliced peppers and finely diced onions, add chicken broth and some soy sauce, and it'll be good over rice.

Also, it'd be good in chili (which is fried mince, peppers and onions -- peppers optional, with a can of tomatoes and a can of beans, salt pepper and chili powder to taste).

Or try Meatball Surprise! Go ahead and make the meatballs, but serve it in soup (like Italian Wedding Soup). Or, surprise them by making Scotch Eggs (boiled eggs wrapped in meatloaf).

Curried Mince Macaroni:

This is a regular pasta dinner in my household,and has always been.. even before I got married.Easy to make and scrumptious to eat.

35 min 10 min prep
3 servings

1 (500 g) packet pasta shells (macaroni)
250 g ground lamb
1 medium onion, finely chopped
3 medium tomatoes, chopped
2 tablespoons ginger paste
2 tablespoons garlic paste
250 ml yogurt
1/2 teaspoon garam masala powder
3 teaspoons red chili powder
4 tablespoons finely chopped coriander leaves
2 green chilies
1 lime, juice of
salt
1 1/2 teaspoons vegetable oil (or any other)

1. Take a deep pan and heat the 1& 1/2 tbsps oil.
2. Add chopped onions and fry till transclucent.
3. lower the flame to medium heat and add the garam masala powder and fry for a couple of seconds.
4. Add the lamb mince and fry till no longer pink and water has dried up.
5. Keep breaking the lumps to ensure the meat is lump free.
6. Now add the Ginger-garlic paste ,chilli powder and salt and fry for another minute.
7. Add the yogurt and cook for 2-3 minutes,stirring now and then to get a uniform mixture.
8. Now add the chopped tomatoes,green chillies,lime juice and the chopped coriander,and mix well.
9. Cover the pan and let cook on low flame for 15 mins,till you can see some oil on the top of the curry.
10. Cook the pasta as per instructions (a little under done).
11. Mix the pasta in the curry and let cook on the lowest flame for a further 5-10 minutes.
12. The entire dish should be saucy-- Garnish with a few coriander leaves.
13. I usually serve it with some yogurt chutney.
14. NOTE:.
15. The yogurt might break up due to the heat,so please don't worry about it.It is just a process,that will make the curry,taste tangy rather than creamy.

One Skillet Spaghetti Dinner

What exactly is mince? Is it ground beef? If so, try this:

1 pound ground beef
1 large onion, chopped
1 (8 oz.) can tomato paste
28 oz. beef stock/broth
3/4 teaspoon garlic salt
1/4 teaspoon pepper
1 teaspoon dried Italian Seasoning
7 oz. spaghetti, uncooked, broken into 3 inch pieces
Parmesan cheese

Brown ground beef and onion in large skillet. Drain and return to skillet. Add beef broth, tomato paste and spices, stirring well. Bring to the boil and add broken spaghetti. Reduce heat to simmer, and cook uncovered for 15 minutes or until pasta is tender. Top with parmesan cheese and serve.

This recipe can be made in 30 minutes or less.

Lasagna

Ingredients:
3 tablespoons extra virgin olive oil
1 onion—finely chopped
7 oz (200g) lean ground beef
7 oz (200g) sliced mushrooms (about 2 cups)
2 cloves garlic—finely chopped
14 oz (420g) canned tomatoes—chopped
2 tablespoons tomato paste
½ cup red wine
1 tablespoon finely chopped fresh basil
½ teaspoon dried oregano
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
2 cups milk
4 tablespoons cornstarch (cornflour)
½ cup grated mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon salt
8 oz (240g) lasagna sheets

Method:
PREHEAT the oven to 200°C/400°F. HEAT the oil in a large frying pan over a medium heat and cook the onion for 5 minutes, stirring occasionally. ADD the ground beef, mushrooms and garlic and cook for 3 minutes, stirring occasionally, until the mince browns evenly. ADD the red wine, tomatoes, tomato paste, basil, oregano, salt and pepper and simmer, covered, for 10 minutes while you make the cheese sauce. HEAT 1 ¾ cups of the milk in a saucepan over a medium-high heat until almost boiling. MIX together the remaining ¼ cup of milk with the cornstarch until well combined. STIR the cornstarch mixture into the hot milk in the saucepan and continue stirring until thick and creamy. STIR in the grated cheeses and salt until well combined. SPOON a little of the meat sauce into the bottom of a baking dish and top with lasagna sheets. SPOON some more meat sauce on top, then some of the creamy cheese sauce, then top with lasagna sheets. REPEAT the layers until both sauces and pasta are used up, finishing with a layer of cheese sauce on top. BAKE for 30 minutes, then remove from the oven and let stand for 10 minutes. CUT the lasagna into pieces and sprinkle with a little freshly ground black pepper to serve.

Variation: To make a meatless lasagna, use textured vegetable protein (TVP) to replace the usual ground beef (the mushrooms also add their own unique meatiness.) You can use Cheddar cheese instead of mozzarella in the cheese sauce.

Tips: This recipe makes a generous lasagna which can be assembled up to 1 day ahead and kept, covered, in the fridge until you're ready to bake and serve. Leftovers freeze well.

Hot Tamale Pie is delicious and easy. I have other recipes, but this is the easiest since it doesn't have measurements that need to be converted.

Hot Tamale Pie

1 box corn muffin mix or 1 recipe corn bread batter
1 pound hamburger
1 package chili mix or chili powder to taste
1 onion, chopped
2 cloves garlic
1 can pitted black olives (omit, if desired, and substitute 1 can drained diced tomatoes)
1 can whole kernel corn
1 can tomato sauce

Mix chili mix, tomato sauce and one can of water to browned hamburger, onion and garlic. Simmer for 1 hour. Pour mixture over thin layer of corn muffin batter. Add layers of corn and olives. Add spoonfuls of corn muffin batter on top. Bake until brown. Serves 4 to 6.
