Craisins are amazingly delicious. You can buy one of those big bags and not feel guilty about eating it all!
Green Mountain Corn Chips are very good as well. Just watch how much salt is in the variety you choose!
Drink an Izze. They're made by Polar (like the seltzer) and they're mostly fruit juice, mixed with fruit juice. I recommend Sparkling Pear, Grapefruit, or Pomegranate.
Apples are delicious and healthy! If you're into oranges, that's good as well, but make sure you bring something like low sodium pretzels or the chips I mentioned earlier so you don't get heartburn. There's not much worse than heartburn for twelve hours.
Cold cuts don't last long out of the fridge. Try getting a whole grain wrap and stuffing it with pickles, lettuce, tomato (if you don't mind it warm), mushrooms, and bean sprouts. Not only is it tasty, but it provides all your veggie servings for the day.
Trader Joe's, Whole Foods, Wild Harvest, and any other healthy supermarket will sell Fruit Leathers. They remind me of those fruit roll ups I ate in kindergarten, only they're much more nutritious... and tasty.
Heath food stores also sell After the Fall fruit juice boxes, which are AMAZING. Try the Georgia Peach or Banana.
Last but not least, you need some protein and calcium! why not try some soy milk? Silk makes a fantastic chocolate soy milk that they put in a "juice box" type container. You don't need to refrigerate it, so its easy and convenient... and so yummy.
I assume this bus has a toilet or rest stops. It'd be cruel to keep you on a bus for 12 hrs without using a restroom.

If the bus is likely to get warm on the route you are taking, select snacks that will not melt. Some nut bars or flapjacks would be good and stack easily. Some pre-packed salads or pasta in sauce or flavoured cous-cous will be practical if you take some small but strong cutlery. Apples and tangerines are good, but take some tissues or wet-wipes if you don't want juice on your hands. A couple of plastic bottles of fruit juice will also be nice, but choose bottles that reseal over cans, as you will want to take occasional sips. Has the bus an onboard toilet? Don't drink too much until you know! If liquid is not practical, think about some flavoured chewing gum or take extra tangerines. If you take a suitable bottle, don't forget to keep it and refill it for the journey home. By the way, if you can choose where to sit think about which side of the bus the sun will be shining during the hottest part of the day, then you can choose to sit on the shady side when you first board - this might be the best way to maximise your enjoyment.

Have a bag of candies with you. Helps me with motion sickness, specially the first half-hour which is always the worst. andrea is right, crossword puzzles, magazines etc are risky options when everything else around you is moving erratically. Texting will give you some company, and doesnt require as much concentration or cause as much dizziness as reading. Music helps to pass the time well, but i usually take the opportunity to catch up on sleep cuz its always quiet in the bus. If youre a light sleeper, maybe you could just enjoy the scenery. i especially love this when travelling at night, and i doodle whatever random thought that comes to mind, doesnt matter if i cant decipher it afterwards lol! Or snap photos out the window and have a laugh at how they turn out, always fun. Alternate among a few things to do if you get bored quick. Do something different each hour eg. pop some candies and put on your earphones, then let nature inspire your creativity, then do some catching up texting, then take a nap and voila, youre there.

Pudding packs and jello packs do not require refrigeration, it is fun if its cold but they don't go bad at room temp. It is always better to go fruits and veggies, carrot sticks, celery sticks, etc.
Cheeses do not keep well and the odor could be offensive to fellow passengers.
Keep it simple and disposable, wear clothes you can drip on and wrinkle and take a change of tops in your carry on as well as wet wipes or baby wipes for clean up.
Salty snacks are fun but a real hazard when you are stuck in confined area for long periods of time and feet may swell, salty snacks are not the best.

Can you take a small ice box inside the bus with you? And are there restrictions on what types of foods and drink the bus company will allow?
I suggest trail mix. If you can bring a small cooler along then I reccomend yogurt, sugar free jello or pudding, fruit cocktail, cheese cubes....

you should make yourself a turkey wrap and put it in a bag for the trip that'll fill you up and they're really healthy/few calories.

granola, nuts, raisins, !! Our kids used to like to take my home dried tomato's, and dried fruit,,,peaches, pears,,,etc. Apricots.
All are very healthy.
