Foil-baked chicken is easy, delicious, and has practically no clean-up afterwards.

For each serving, take a large square of heavy-duty aluminum foil and fold up the sides to make a square packet. Place a boneless chicken breast in the center and season with one of the following choices: barbecue sauce, teryaki sauce, lemon pepper, dill butter, or any other favorite chicken seasoning.

Place any or all of the following around the chicken: a peeled and quartered potato; a peeled and sliced carrot; a few mushrooms; some thin broccoli or cauliflower spears; some slivers of red onion; and/or strips of red or yellow peppers.

Dot the veggies with butter and season with salt and pepper. Fold the sides of the foil to form a tightly-sealed packet, and bake at 350 degrees until the chicken is done and the veggies are tender -- approximately 25-35 minutes, depending on the thickeness of the chicken.

Serve with deli fruit salad and breadsticks for an easy meal.

I have such a great recipe for you!! I take chicken breast (boneless and skinless, which usually has no flavor) and I shake it in some coating (like Shake n' Bake) and instead of baking it in the oven, I just fry it in a little veg oil in a pan on the stove top. I would recommend these flavors: Italian, Southern Fried, and Cajun mixed with a little of the original flavor.. it is delicious!! If you are very health consious, then I would say bake it or put it on a grill, either way, it's all good. Hope this helps.
